Learn how to can beans using the raw pack method, this is by the far the fastest and easiest way to can raw shelled beans. Dry beans require soaking (it is not SAFE to put dried beans in a jar, fill it with hot water and pressure can) they must be soaked to be done safely.
But with fresh shelled beans, you can use the raw pack method, which is WAY faster and very easy. It's great to have these on the shelf to add to soups, stews, or just reheat with some bacon and cornbread for an easy supper.

    I grew Windsor Beans (a variety of broad bean, like fava or lima beans) this summer and they are finally ready to harvest. I am in Alberta, in the foothills of the Rocky Mountains and the elevation is almost 3,500 feet. Can you explain what I need to do differently? I heard you say over 1,000 feet you need to use 15 pounds of pressure. Is that just pressure on the gauge, or do I need a different weight on my canner as well? Is the time the same? Thanks!

    Yep we grow Vermont cranberry shell bean, black turtle, Jacob cattle dry beans. We both dry and can depending on our needs

    Thanks for this really excellent video! I have the same pressure canner you used here. I've only used it once and appreciate knowing about the siphoning issue. I had a heck of a time getting the lid off so maybe I won't wait quite so long next time! Also, I read your book The Made from Scratch Life and loved it. You certainly are blessed and blessing others too.

    I just heard your comment about not canning lima beans when they’re white but to can them when they’re green. Does that apply to the Christmas pole lima beans? Fully mature they are speckled maroon, and when they are in between they’re white and even white when they’re small.

    Can these beans be frozen?? I have tons of beans ready to be saved for soups, but i do not have a pressure canner..should i let the beans dry completely & just save as a dry bean for the time

    It depends on your altitude but for 1,000 feet above sea level or lower it's 40 minutes for pints

    How tight were the lids before you put them under pressure? Did you tighten even more after pressuring them?

    You only tighten them to finger tip tight (over tightening can cause lid buckling and failed seals) and no, you don't retighten after canning

    Why does it matter if they lima beans are green or white at 7:50? This is my first year growing all sorts of beans, and I've scarlett runners,favas, limas, flambeau, indian tongue, asparagus bean and blue kentucky all growing. Is canning preferable over drying, taste-wise? Is it better to try and keep the same size beans together? Any other suggestions for me on preserving beans?

    what do you by its not safe to pressure can dry beans? thank you for the video,,, i just looked up how pressure can dry beans or peas in the presto instructions and recipes book that came with the pressure canner when i purchased it,,, on page 36 it gives the instructions on how to do this,,, thanks fer the video,,,am i missing something???

    @russ sherwood it's safe to pressure can dry beans if you soak them first, I say it's not safe to pressure can dry beans the way you do fresh beans (no soaking). And the processing times are different for dry beans vs. fresh the way I'm doing them.

    Once the pressure cooker reaches the 10lbs of pressure, is the heat turned off then or is it kept boiling at that pressure for a certain time..

    No, once it reaches 10 pounds of pressure you start your timer and operate it at the 10 pounds of pressure for the length of the recipe.

    I know you said this was your families strain of pole bean. Is it a specific type of pole bean or can you do this with any pole bean if you let it dry? I definitely want to learn more about canning and preserving my harvest

    No, it must be done in a pressure canner because they're a non-acidic food.

    Great video as always. But i do have a question??? Boring as it may be, can you once show a video with just the 10 minutes on venting steady stream. Would it be possible to show that. How thick is that steady stream of steam going??? Is it straight steam or does it have broken strong and weak steady steam???? Sorry that it is a hard question to describe. Thank you!

    I don't know that anyone would watch it for a full 10 minutes but in answer to the question one it starts being steady (not spurting) I start my timer. It does get to be a stronger stream after a minute but so long as it's steady, you're fine to start the timer.

And I love and make as much from scratch as possible. I have raised our meat now 14 years this Nov. but because of my hubby medical problems I have decide to quit in 2 more years, The garden and canning I plan to keep doing.
