    I tried this technique and it does work, but still tastes like absolutely nothing when baked. I bought fat free cheese for weight loss, but have decided the extra 25-30 calories for the low fat version will definitely be worth it going forward.

    Can you look into “Enlightened Ice Cream” (light version not keto) and reverse engineer the ingredients list and make it ? It tastes so good but is pricey

    Any good tips on cleanup after making the cheese emulsion. I made the mac and cheese (which was awesome), but my immersion blender blade is still dirty and my scrub daddy sponge is covered in cheese! Halp

    I was writing up a response about how I think I got okay-ish results (not quite to this level) by using it incorrectly, but then I got distracted by what looks like plastic-lining still on the freezer door at 4:08.     This is interesting. I have got concentrated lemonade and backing soda. I can make some sodium citrate myself to try this out.

    Reacts pretty quickly. The citric acid in the lemonade isn’t concentrated enough though. To match half a tablespoon of baking soda, I have added multiple squeezes of it. The solution now tastes a little salty and not sour at all. Given that both sodium citrate and sodium bicarbonate can easily dissolve into water, the solution must be saturated when I see undissolved solids at the bottom. Then, I should be good to estimate the weight of sodium citrate in this solution with its solubility.

    I had no idea that people couldn't get this cheese to melt properly until I saw this video lol...I normally just throw it into the pan to make grill cheese sandwich or omelette with, same exact brand cheese too

    What you think of adding a small amount of fat back in (butter for example), 3 g would only add 20 calories to 100g of cheese but I wonder if it would make a better emulsion.

    Unfortunately I don’t get fat free cheese over in Ireland, instead have to use reduced fat mozzarella which is great but not perfect, it does melt well though

    It’s mostly annoying in sauces. I’m sure the sodium citrate would help a lot, haven’t got any of that yet. I tried making a cheese sauce and essentially the ff cheddar just broke into tiny pieces instead of actually melting and blending. Ruins the texture.

    Anytime I've made a FF Cheese sauce in the past I've used at least 1 square of the fat free cheese. Since it has the emulsifier in it the sauce comes together much easier. Need to get some sodium citrate to try it out though as well

    For anyone that tries this, be very careful with the melted cheese. If you don’t wipe it up right away, it literally turns to super glue when it dries and becomes a nightmare.

    You're awesome dude. I LOVE the science you put into this stuff man. One question. Would you ever be open to doing some Vegan recipe stuff? I wanna try some of the stuff a lot of the anabolic community does but it's just tougher being vegan. Trying to sub the powders with vegan ones usually throw off the recipes like mad because it reacts differently most of the time... I'm working on some stuff myself but I don't have a culinary science degree or any of that, so I would be curious to see what you can do. Regardless of my vegan ways I still fully support all of you guys too, this is just how I like to eat and MY moral stance on it. I'm always on board to learn still.
