    Happy Retirement!!! I love watching your channel. I live in Northeast Mississippi, my husband and I took a little trip to your little town and Hardy AR. Beautiful country!!!After watching your video on your and Mr. Brown’s trip to Hardy, I just wanted to visit.     I absolutely love you and Mr. Brown so much! I get so much inspiration and ideas to do in my mini homestead. I grew up on a small homestead and watched my mom do all the canning and caring for the animals. We did it as children but when I grew up, I went to work and focus on education. After completing a Master's degree, completing my career and raising a few children, I am finding joy in going back to my roots within the city limits and creating a mini homestead! It is my old/new passion in retirement.

    I love you and Mr. Brown so much. I am learning how to be a little closer to self sustainable living. I may not ever get there seeing how I am going to be 63 in a couple of months but I am better off now than what I would have been had I not taken action. I just froze my first organic peas and still working on them and I am going to be pulling up my potatoes in a couple days. I cut and dehydrated my green onions as well. Thank you for speaking God's word and helping me to be better, do better.

    The broth is beautiful! I & my husband are now retired and debt free! YAY, I will say that we work harder now at home than we did at our jobs. There's nothing like being your own boss and waking up in the mornings when you feel like it.

    Last time I roasted off my beef ribs I picked the meat and canned it separately from the broth Handy for a pot of soup That broth looks amazing!

    Hi Ms. Lori. I am 58 years old and I have canned once, so far! I followed your instructions to make berry jam. It turned out great. I am very interested in more canning videos. I haven’t purchased a pressure canner yet, but I’m about to. Growing up, my Mom canned everything, but it was something I never learned. I did a lot of cooking as a teenager, but canning was her thing. Now I want to do it myself. I live in the suburbs outside of Tulsa, OK so I don’t have a big garden,but I do have a few things planted and I will supplement from a local farm stand. Appreciate you so much!     This my last year in the school cafeteria. I have 22 years and have seen the way everything is cooked change so much in the last 10 or more years.     We too worked like farm animals to get debt free with our little homesteading farm and home. Next to my children, it is the thing I am most proud of! God granted that we were able to do and show to our son and daughters that it can happen and are working to it now.

    I currently have just under 40 gallons of stock canned and in the pantry between beef, turkey, chicken, and ham; that stuff is amazing and will grow back a limb. I don’t season my stock with anything because I just don’t know how I’ll end up using it. If I’m gonna reduce it and it’s salted it may get too salty, so I season it as I use it. Bones, onions, carrots, celery, umami powder, bay leaves, a splash of vinegar to help release the flavor from the bones, and maybe some garlic and that’s it for me. Umami powder is the best thing I’ve come across for many years; it’s magical.

    My favorite part of making my own chicken stock, especially now that I make it with the Instant Pot, is that it gets so gelatinous that it comes out of my quart containers kinda in clumps because it's so thick. I do love my Better than Bullion, though. It's a lifesaver.

    That's a telltale sign that you got a lot of that good marrow and collagen...all so good for you! You can put most store bought " bone broth" in the fridge and get very little congealing.

    @@northernkarma9296 do it! I thought I made pretty good stock before I started using the IP but it's a game changer. It extracts so much flavor and collagen/marrow that you won't want to go back. Besides, it's so much faster.

    Your broth is beautiful!! I didn't realize the bones could be used twice. I didn't realize that this cut of beef could be used either. A fat straining glass pitcher is on my wish list. Last week I used 5 Black Maran Roos to make bone broth. Oh, my how rich and beautifully dark it turned out for chicken broth. BTW, I love your clay pot as a utensil holder. Just stay natural and personal as you share with us. It's like a cozy visit in your kitchen with a friend. Happy retirement years ❤

My husband still runs our business, but I’m adding chickens, ducks, pigs, my garden keeps getting bigger, and I couldn’t be more happy!     Ms Lori, a lot of people who suffer from arthritis dont know it but would benefit greatly from stock made from beef bones or chicken on the bone, because there are many nutrients in the bones and joints of animals that will benefit those arthritic joints and soothe away arthritis pains. Collagen is in those connective tissues and is very good for our bodies. If people are not using the bones and joints in their cooking, they are ripping themselves off! God bless you and Mr. Brown for still doing things the old fashioned way and teaching us these ways!❤love you both!

    I roast my onions and whole heads of garlic with the bones. I cook/simmer my beef bone stock for 48 hours. I find it turns out better. But, you are torchered for an additional 24 hours with that wonderful smell. We Love you guys.

    Mrs.Lori, I want to thank you for your videos, I am the only one in my family or friends for that matter, that has learned to can foods, they don’t want to learn, but that’s ok, I love cooking from scratch, I’ve been making chicken and beef broth for many years, always my daughter asks for some when she or my grandson is feeling sick.     I'm 76 and because of high priced meds I'm in debt with charge card so you are really blessed. So happy your out of debt before retirement. 😅😅

    Hi Ms Lori - great episode. I’m a single lady retired in May 2021. I gave been debt free for about 10 years now. Even so, this economy we are facing is concerning. My mom taught me to can when I was in my early 20’s. I moved away to another state and since mom wasn’t there I really didn’t have any interest. In 2020 aka early Covid I invested in all the supplies because my old things were long gone. I have an older close friend who helped me get going again and just this year started watching KZread and found your channel. If my mom was still with us she would be so proud of what I have learned. I am happy too as I am building a wonderful healthy pantry. Now I have say I do not a garden but I do support my local farmers for produce in the summer. Have a wonderful summer break.

    This was another wonderful video. You and Mr Brown have a way of making me feel like I'm with you in your cabin. I'm always inspired to try whatever you're sharing and my family is also blessed because of you. The love you send out to your subscribers is clearly felt and we reflect it back to both of you. It's always a happy day when you put out something new. I'm tickled that you will both be retired soon and your days will be your own. My dad always said once he retired that the days are shorter and he doesn't know how he used to get so much done on the farm plus working an outside job. I suspect it had to do with the fact that instead of getting up every morning at 4:30 to go to work, he enjoyed sleeping in a few hours later once retired. 😊 I sure do miss him! He preached living a debt free life and my sister and I both followed suit just as soon as we were able. I'm so happy you are also living without debt and won't have that worry hanging over your head. Congratulations! May the two of you have another 40 years to enjoy each other's company before our Lord calls you home. I'll be looking for you both to come in the gate and I'll introduce myself. I felt like there was no time for it,but you put the desire back in me to "make the time." What a gift you are. Keep making your videos for as long as you can.     26:40 😂 this totally spoke to me. The very first thing I ever pressure canned was chicken broth. I was then terrified of using it because I realized that I didn't debubble. I can laugh now, but those jars stayed on my shelf for months until I found out duh, there are no air pockets in liquids. I think i learned it on sutton's daze

    You'll enjoy your retirement! Just don't work yourself to death. It's really easy to get into to much sometimes. I really enjoy your site. I've learned so much from you. I learned to can from my mother and I've canned most of my married life. We're at 52 years now. Keep posting and I'll keep watching for sure!.

    My mom said that was the way they stored their sausage, cooked and covered in layer of lard in a pickle crock. They would store it in the cold cellar.

    Congratulations!! What a blessing to be debt free!! I will have our house paid off soon, and that’s the last thing to pay off. You are such a blessing to me, I’ve been learning to can thanks to you, The relationship you and Mr Brown have is so sweet, my husband has alzheimer’s, we’ve been married 50 years, so life is one day at a time.     I finally got a chance to watch this video and I must say I was just shocked at first! My family eats short ribs on special occasions as a special treat. They are over $10 a pound where I live in SC. They do have more meat on the bones here, but I could never afford to buy enough to fill my roaster!     Love the way you pronounce things.. it cracks me up and reminds me of my mother who is in heaven. We always had a big time in the kitchen cooking and reading the Bible discussing the scripture ❤
