That looks soooo yummy Carter. Just a couple of tips. You season the same way I do. You can always add more salt, but you can't take it out. When I butcher, I ask for the bones and ask that they cut them in 4 inch pieces. That makes it nice to fit in containers, the freezer and you are sure to get the nutrients from the marrow. I also, drain the fat and then deglaze my roasting sheets with boiling water, using a silicone spatula and save that for my Third batch. This adds richness back in and makes the sheets easy to clean. I usually get 60 pints and 20 quarts from a whole beef. If the beef was large I do 2+ batches. I Also use a commercial roaster that holds 40 quarts and my oven to cook the broth. This is like doubling Carter's recipe for the other ingredients. BTW this is a winter job, when you don't mind the additional heat in the house.

@@growandpreserve That depends on the breed/size of the beef and if you have it cut with bone in or boneless. For a range: from a Challeut (hugh breed) I had it boneless and got 278 lbs, but I don't think it was all the bones; from a Jersey, I had bone in and got 82 lbs., much more manageable. Note: the marrow from the Jersey leg bones, tastes just like butter, so does the fat. I had them save the fat trimmings and I rendered it, to use for frying.

hello Carter. hope the new year is starting off well. finished by bone broth with much success, with one hitch, i didnt have an electric roaster so i used two oven style roasters. difference for me is the roasters kept steaming away the liquid causing me to have to replace every hour or two. this resulted in a lot of the yummy broth collecting in the lid and tinfoil. so this meant i didnt get as much as you. I also only did two rounds. i have an electric roaster coming to me soon i hope. Followed your recipe to a tee and you are right! very yummy. I was still able to get 20 pints meaning each jar was a cost of $2.72 CAD per pint so i am still quite pleased with my results and will deff do this again. thanks again for all your great recipes and support.

This is the best video I've seen for making bone broth. I will have to order some bones and get extra jars/lids for this. Thank you so much for sharing this with us. By the way, I dry canned potatoes this afternoon. Just used up what was left from last purchase. I have 3 qts and 1 pint. Looking forward to making beef veggie soup this winter.

I didn't know you could make multiple batches, thank you for that. On a side note my friend canned on her marble counter and had several jars break after 3 to 4 uses. She now keeps the jars on a towel or large cutting board. She hasn't had a jar break since. Not positive it was the marble that did it but figured I would share the info.

I did it! Thank you for sharing this tip. I now have 14 pints of Round 1, 7 Quarts of Round 2, 7 Quarts of Round 3 and 12 Quarts of Round 4 because I added the beef liver to this round since it was for my 2 large dogs. Once a month they will share a quart of beef bits and liver with broth or broth with beef bits or ‘Izzy bits as you called them’ to put over their dry food. Never in my life did I think I would get a kick out of Oxtails and Soup Bones and finishing a 4 day canning session with something for my big dogs. Repeating my days made me so much more efficient. I needed to get my processed in place and this project was exactly what I needed as a newbie.

I haven't done beef bone broth yet, but have donechicken bone broth. That came out beautiful. However, I didn't know about making more batches. That is great to know. I also put them in both sizes of jars. Love the ending of your video!

I usually do two batches and mix them, never thought about making a deep broth for different things. Another change I will be making to my process. Thank you

Thank you for this informative video I’ve never made bone broth and I haven’t bought any either because it’s so expensive I would like to plan to purchase some bones from a good butcher because I want the steer to have been fed and raised healthy you can’t tell the life of a steer from the grocery store bones so thank you for this video and I would like to make some bone broth because if it’s healing properties I’m not a fancy cook I would probably just use all of it for a bone broth to drink or a few simple dishes thank you very much

Carter! I just found your channel earlier this evening, and I've watched several - but I must say...the bone broth video? OMG...I was a one and done, but no more. I was stunned at how much you got out of those bones, and how utterly beautiful the first and second run were. I also use a big roaster, but I'll absolutely be doing things differently from now on! P.S. Showed hubs the trailer and he wondered where your canning pantry was. Later, I found the short that revealed the crawl space. I promptly went to hubs, told him, then informed him no way was he building that in our crawl space! He laughed, because he knows I refuse to go down there. *shudder*. LOVE your channel and your easy, open way you have about you.

I just finished 1 round of veggie lamb bone broth stewing and still have more veggies to make into broth and more lamb to stew down for soups and then roast the bones and stew for even more for my bone broth.

I pour my bone broths into huge containers and refrigerate them over night. Then I skim the tallow off the top and save that as well. I make my broths the same as you minus the rosemary. ❤

hi carter, i always leave the fat and use it for the fat to make brown gravy it makes a delious sauce over meatballs canned withoutany sauce that way i dont waste and my kids love beef and brown gravy it is so goodhope you are having a great day,i wanted to tell you i told my daughter about your channel and she called me and said she spent the day on it and could not stop watching you,but i cant either so way to go carter lol

Excellent tutorial! At one time I worked in a gourmet kitchen shop and cooking school. The chef was French trained and I learned so much from assisting with classes and her approach was very similar. I’ve been putting my dehydrator to good use, but I just got my very first canner. It’s a hand-me-down, bought at a thrift store, stove top Presto pressure canner. It’s an oldie, with wood handles. I have to replace a few things on it, but I’m excited. How do you know when to pressure can or water bath can and why? I appreciate all your hard work, and sharing it with us. Seeing Izzy at the end was so fun.

Hey, Vonda! Woohoo to the new-to-you canner! According to the USDA, anything very acidic (below 4.6 pH) can be water bath canned. Anything above that should be pressure canned. (Do note that the Amish and several countries water bath everything, but I am no expert there.) All meats and vegetables (unless pickled) should be pressure canned. Most fruits, including tomatoes, can be water bath canned, although often lemon juice or vinegar might be added to insure a safe pH. If you look at my latest video on 31 days of preserving, the following items were pressure canned because they are alkaline: chicken broth, chicken, potatoes. Everything else was water bath canned because the recipes called for sufficient vinegar to bring the pH level down to a safe level (below 4.6). It's best to start out with recipes from a trusted source until you've gained significant experience. I will happily help however I can.

I do not strain anything. The bone broth is best when all the vegetables, spices, garlic and flavorings from the fat stay in it. I only remove the bay leaves. It sticks to the bones and stays with you on a cold winter day.
am so going to do this! need to get the bones first. i have loads of chicken bone broth but lack the beef. did you add the drippings from you baking sheets?

Love bone broth. I got my bones from a 1/2 beef we bought locally. Nothing better!!! I survived the storm without any damage but my neighbors up the road didn't fare well. Say a prayer for Adamsville please!

Carter, do you completely fill the water to the rim of the roaster with each batch or are you just covering the meat? And do you top off the water as it evaporates? Happy New Year by the way!

Hey, Debbie! I fill it within maybe an inch or so of the top, so there's room for it to do its thing. I don't refill water during the process, because I don't want it to be as rich as it can be. With so many batches, I end up getting plenty.

Yes. Thaw it completely, and heat the broth and your jars before putting them in a heated canner. You'll be so glad to get it out of the freezer!

After watching your video I have sourced some beef bones and have them in my electric roaster right now. So excited to have this on my shelf! With bone broth #2 and #3 did you use the same spices and veggie scraps that you used for#1? Also what veggies did you use?

Hey, Dolores! So glad you're making some bone broth. I usually throw onion peels and ends, carrot scraps, and celery scraps (plus limp carrots and celery) in a bag in the freezer just for throwing into broths. I do not carry over the veggie scraps from one batch to the next because I don't want them to get mealy and bitter. The day I made this batch of broth, I did not have any other veggie scraps, so I let follow on batches run without them. Hope that helps.

I can't find bulk bones anywhere in Minnesota, they have found too many uses for them like bone meal. the bones I did find were over 4 dollars a pound and if I order bones they are even more.

Nope. They are all shelf stable after pressure canning.

Bone broth is 20 minutes for pints or 25 minutes for quarts in the pressure canner. Enjoy!

I don’t own a roaster oven, and have been debating whether to buy one. They’re very large. They are definitely large! I bet someone you know will have one you can borrow. I have no problem loaning stuff like that to friends and neighbors. For years after my crock pot bit the dust, I borrowed one from a friend. Always returned it with a couple jars of something yummy. Several months ago, I bought a new one. Haven't even taken it out of the box yet! For reference, my roaster oven is 22 qts, but they come in all sizes. Keep me posted, Wendy!

It is entirely up to you. I generally add seasoning to al but round 4 for the dog.
So, I’ve put the cart before the horse when I started making my bone broth. I started and am almost through with bone broth number one cooking and I realized we don’t really cook steaks a whole lot. Could we possibly use it as a regular broth?

You can, but the taste is much richer and deeper if you roast them first.
I'm confused...I didn't know you could do more than one run of broth with the bones, but did you add more veggies to the other batches except for Izzy's? And how much more water did you add back into the roaster?

If I had had more veggies, I would have added them to subsequent rounds, but I didn't this time. I fill the roaster up with water each time.
Can you use a large stock pot instead of a roaster?

Yes, just know that it will be on the stove for quite awhile, including overnights.
I did not know this…I just did a small batch 4 lbs in my pressure cooker about 4 hours total can I now put these bones in again with just water and pressure cook for a round 2 maybe dog topper? Or does pressure cooking extract most out of the bones ?

I would definitely do them a second time. That's likely all you'll get when using the pressure cooker, because it will make the bones more brittle.

400-425 F until I see some color on the top, maybe an hour. I only roast them the one time.
Stupid question, I know you added onion/garlic/spices to the first run, but did you add them to the 2nd and 3rd batch as well? Additionally, I plan to freeze dry the bone broth for long term storage. Are there any additional steps I should take (beside extra straining to remove the fat)? Thank you in advance!

I would have added them to later batches if I'd had any more. Freezing is also fine. Be sure to leave extra headspace so the bone broth can expand with freezing.

Carter, i have a question about subsequent rounds of bone cooking. I did beef bones for the first time. I saved the excess fat & added it back in to the next round for giving it flavor. I never thought about more rounds! Is that an ok thing to do? My round one sis not come out nearly as dark as yours. I didn't have bones with as much meat left on them, i got them from the grocery store butcher. Next time I'll go to the local butcher. Also, did you add more veggies to the subsequent rounds?

It's fine to add the fat back to cook with subsequent rounds. No need for meat left on the bones, although marrow is a really good thing. Browning the bones in the oven, adding clean onion skins to the veggie scraps and cooking it for a long time will give you the deep rich color. If I had had more veggie scraps for subsequent batches, I would have added them, but I was out. Hope that helps!

I added seasonings to all but Izzy's batch. If I'd had more veggie scraps, I would have added them to the first three batches as well. Since I didn't, I just removed the spent veggies from batch 1 so they didn't turn bitter.
Could you refrigerate to skim off fat then reheat?

Hello, again. Do you mind sharing the capacity of your roasting pan? I’m on 3rd round of beef bone stock and am loving the results! However, I’m not getting quite the same yield. Also, as the stock reduces from day 1 to day 2, are you adding any more water to the roaster to bring it back up to full?

Sure! I believe it's 22 quarts. I fill it to the top. I do not top off the water on the 2nd day. How does that compare to yours?

@@growandpreserve Ahh, mine is 18 qt. I figured it might be the case that I had a smaller roaster. In that case, I’m getting a good yield. I got 3 qts and 9 1/2 pints from first run and 6 qts + 1 pint from 2nd. I’m enjoying a cup at this very moment. Very good!! I also used some to can some green beans? We’ll see how those turn out. I had tried making broth before but didn’t roast the bones first and certainly didn’t let them cook for nearly long enough. This is marvelous. Thank you so much!!

I also have a small pressure canner but love the idea of canning the meat. Does the meat come out dry/overcooked since it’s essentially being cooked twice? Also, would you mind sharing the spices/herbs you use or are they the same as for beef bone broth?

@@Tracie804 You don't really need as many bones as I used, but I was really trying to get them out of my freezer in one shot. You could easily get by with half what I used and be fine. Using a whole chicken that you break apart is fine, but it's probably not the best use for the meat. Canned already-cooked chicken is definitely drier and different in texture. I find the best uses for the chicken bits I pull off the bone and can to be soups, stews, chicken pot pie, casseroles, etc. We had a farmer's market in Atlanta that sold neck bones, backs, feet, etc, specifically for making broth. This is likely the easiest, quickest way to go, if you have access to something like this. If not, or if you want to have some meat to can as well, a big pack of leg quarters would be a great way to go. The dark meat holds up better to the cook-then-can process. I usually use thyme, rosemary, bay leaves, salt and pepper, if I'm planning to can the broth. If I'm just making enough for a soup dinner (not for canning), I usually add sage or poultry seasoning. I leave these out if I'm canning because sage can change to a metallic flavor when canned, and poultry seasoning limits (in my head anyway) how versatile the broth is in my pantry. Keep me posted!

I do season the other rounds, but I didn’t add veggie scraps because I was out. Just be sure to pull out first round of veggies, because they’ll get bitter.

I haven't, but I would if I had them. The USDA doesn't address it, but it's been done for generations, so I'd have no problem with it.

Hi Carter! i am into my first 20 hrs for my beef bone broth. in watching your video i noticed your 24 hour view was a fair bit darker than where i am. is it possible there may have not been enough meat on my bones? they were bought from a butcher shop as soup bones.

The darkness of the broth will come from roasting the bones and from onion skins. It's not a necessary thing, but I do appreciate the richness.

@@growandpreserve Hi Carter, I was able to can 30 jars of beef bone broth. 23 pints, 1 quart, 1 24 oz., 5 1/2 pints. And, I have a story to tell. My sweet husband is a real character, he woke me up 3 times in the middle of the night checking and stirring the roaster pan. He was so worried about it. I kept telling him everything was Ok. I did add some water to calm him a little. He told me he needed to know everything so if he ever needed to make it he would know what to do. Yeah right! Like that will happen anytime soon! LOL 🤣 But, you never know, he just might be in charge of the project next time around!! 😊 Needless to say, I was exhausted! But, between the 2 of us, we got the job done perfectly! ♥♥♥
