It’s typical fishing weather, just not what you would expect when you think of Indonesia.. I am in the middle of the ocean, 300 kilometers off coast from North Sulawesi, Indonesia and we are fishing on skipjack tuna with pole & line! Check out my turn on the freshest tuna ceviche ever.. A spicy curry paste, amazing local limes, onion, beautiful avocado and the freshest sustainable skipjack tuna!

    Enjoyed it a lot! I think you could elaborate a bit more on *why* this way of fishing is sustainable. I think that is an equally, if not more important question to ask and answer than the *what* in this case.

    i liked it but i still want to know on why it's sustainable? i know that a tuna can lay over 100.000 eggs but i also know that some tuna like the bluefin tuna are endangered specie.As long as the tuna are catch after they lay there eggs it's sustainable.

    It's because as opposed to using trawlers, which can damage reefs and other ecosystems as well as catch other species collaterally and damage those individuals as well, they only catch the Tuna without damaging anything.

    Fascinating watching, love the combination of the fresh ingredients. When i go fishing i'm lucky if i catch one fish all day, i guess its all about the baiting. Thank You Bart.

    Great video: I love the way you travel all over the world and bring us delicious recipes! I do love seafood, recently trying pickled herring with onions - absolutely loved it. I hope to make this too when I get hold of some fresh fish.

    WOW! Thanks for posting as I did not see this one. Another great episode and I like how you played with the seagulls and where on the waterfront. Next time head to Neah Bay and get salmon from the local Indian tribe. Or come to Bainbridge Island and get Oysters. Or head to Penn Cove (Coupeville) and get their world famous mussels.     Nice, could you do a Sea Urchin Ceviche? I ate it this one time at the legendary Dorsia restaurant in NYC, never found it again that good. Now excuse me but i have to return some videotapes.

    I actually own a sustainable seafood brand with products being sold in The Netherlands and UK, this is one of the fisheries who we buy our tuna from, so I visit fisheries on a regular basis to experience the fishing proces and meet the fishermen and women who we do business with. This trip was combined with a trip to Bali, I was invited there to speak and cook at the Ubud Food Festival!

    Me too. I don't particularly like raw food or any food that is undercooked. But I always liked Bart's extra effort to cook in these environments.

    You can leave it in the marinade longer and it will be cooked through - although tougher, too, which is a bit of a waste of such great tuna.
