Hey Mandy, your previous recipe for wontons has me and my other half having steamed and fried wontons on a fortnight basis. We use dipping sauces, but this time I'll make a soup. You're a champion, thanks from Australia.

Be sure to watch her previous video on ingredients. She did a really good job of describing the differences between good, better, best. I used my phone to take pictures of what she recommended and handed my phone to the nice lady at the Chinese grocery store and she walked me around the store to pick the ingredients out.

This evening I made Hot and Sour Won Ton soup. Another smash hit. Your recipes are amazing. I learned that mixing meat in one direction makes a difference. Went to Hong Kong Market (Hester St in NYC) to get wrappers and scallions. Everything else I had at home. I love hot and sour soup always. This was a superb variation. People watching. Try Mandy’s recipes. They are easy to follow and the results are worth it. I used my own hot chili oil on top. Yum. Sichuan peppercorns worked their magic.

"Wontons don't need to be precise" is almost an understatement. I saw a guy in San Francisco's Chinatown making them with one hand. He just held the wrapper in his palm, plunked a bit of the filling into it and closed his fingers in a somewhat special way. He made about 10 wontons a minute.
