Qian Li Xiang Huntun- a wonton smells so good, the fragrance can spread out to 500 km away. That literal translation is exaggerated, but it indeed smells amazing and tastes incredibly delicious.
🥢 RECIPE
INGREDIENTS (Makes about 50-60 wontons)
300 grams 10.6 oz of ground chicken
200 grams 7 oz of peeled shrimp
100 grams 3.5 oz of garlic chives (jiu cai) or scallion
1.3 big size onion diced
18 cloves of garlic
2 inches of ginger thinly.
3 scallions, cut into 2 inches pieces
1.5 cup of vegetable oil (I am using corn oil) (Amazon Link - geni.us/InBtXsB)
1 cinnamon stick (Amazon Link - geni.us/y4baX3)
2 bay leaves (Amazon Link - geni.us/NfVv)
1 star anise (Amazon Link - geni.us/eybl)
2 cloves (Amazon Link - geni.us/VFMDL)
3 dried red chilies (optional) (Amazon Link - )
1.5 tbsp of soy sauce (Amazon Link - geni.us/EFKYHF)
1.5 tbsp of fish sauce (Amazon Link - geni.us/5VPR)
1 tbsp of oyster sauce (Amazon Link - geni.us/ZgRz6)
1 tbsp of chinese cooking wine (Amazon Link - geni.us/MrdpnMq)
Black pepper to taste (Amazon Link - geni.us/lEzgr)
1 pack of wonton wrapper 50-55
8 cups (1.9 liters) of chicken stock or water
1 tbsp of salt to season the broth
1/2 cup of cold water to drop the temperature
Baby bok choy or other green vegetables
Diced scallion as garnish
Pickled long beans or other pickles as toppings optional
INSTRUCTIONS
Soak 1 cinnamon stick, 2 bay leaves, 1 star anise, 2 pieces of clove, and 3 pieces of dried red chilies with some hot water for 20 minutes. then drain thoroughly.
Dice 1 and 1/3 of a big purple onion.
Finely chop 18 cloves of garlic. Optionally, put the garlic in a sieve and rinse it with running water to remove the mercaptans. Dried it with paper towels.
Cut 3 scallions into 2 inches long pieces.
Slice 2 inches of ginger finely.
Dice 100 grams of garlic chive. You can use other types of vegetables if you want. Such as mushrooms, carrots, cabbage, scallion...
Pour 1.5 cups of oil into the wok. Add the diced onion. Simmer it on medium-low heat for 5 minutes. Add in the garlic, ginger slices, scallion strips, and the soaked but well-drained spices. Continue to simmer everything on medium-low heat for another 20 - 30 minutes or until the onion and garlic are lightly golden. Make sure to stir constantly the whole time.
Drain out the oil. Store the oil in a sealable container. It will stay good for 2 months in the fridge.
Remove all the spices, scallions, and ginger slices. save the fried onion and garlic for the filling.
Roughly diced 200 grams of peeled and deveined shrimp. Add it to a big mixing bowl along with 300 grams of ground chicken thigh.
Season with 1.5 tbsp of soy sauce, 1.5 tbsp of fish sauce, 1 tbsp of oyster sauce, 1 tbsp of chinese cooking wine, and some white pepper to taste
Stir the protein within 1 direction for 5 minutes to develop the texture. Add the fried aromatics, the diced garlic chives. Keep stirring the filling until everything is well combined.
Put some filling in the middle of the wonton wrapper. Gather the edge together and pinch to close it. This recipe is enough to make 50-60 pieces of the wonton.
Bing 8 cups of chicken stock to a boil. Season it with some salt by taste. Add the wonton. Cook over medium-low heat until the wonton float to the top of the water and the pot should come back to a simmer. Add 1/2 cup of cold water to drop the temperature. Wait for the pot to come back to a simmer again. The total cooking time will take about 8-10 minutes. Optionally, throw in some baby bok choy and you are done.
Drizzle in 1-2 tbsp of the aromatic oil. The heat from the soup will reactivate the fragrance. Sprinkle some diced scallion as a garnish. Serve with Pickled long beans or other pickles.

One of my boys loves Wonton soup. I have been making it for him for 26 years. When he moved out, all he asked for for Christmas, and birthdays was to fill his freezer with Wonton. My recipe…was much simpler. I was so intrigued by your recipe I made a patch, and I was blown away. My son said it’s the best thing he has ever eaten. Hello 👋🏻.. I made this recipe today for my family and it was delicious 😋.. I would like to share my notes here: I used 500g ground chicken without shrimp. I used fresh chicken broth which I made a week earlier. I didn't use wine because I am a Muslim. I made myself the wonton wraps: 2 cups of All purpose flour, 1 tbsp hemalaya salt, > cup of water &1 egg. I used the pasta maker to have very thin wrapper. I got around 73 square wrappers!! It took time and effort to make the wrappers but I enjoyed it and was worth it!! Thanks alot 👍🏻

I didn't know that either. I make Hungarian Goulash often, my favorite dish, and sometimes it would have that bitter taste from cooking the onions and garlic. I started not cooking the garlic with the onions and adding it after I added the liquid to the meat and onions. I'll need to try this.
I really love how you explain why you do things. So many recipe videos just tell people what to do without telling them why. As someone who experiments with cooking and finds it hard to completely follow a recipe, knowing why things are done is important and interesting. Thanks for the amazing content!

Okay so I made these sometime last year for my first time (down to making my own wonton wrappers) and I was so so proud of myself for the way they came out thanks to your recipe ♥️ I’ve been teaching myself how to cook different foods and I usually stick with Caribbean but the way these came out gave me so much more confidence to make dishes I didn’t grow up with and hopefully I have some time soon to do it again

Honestly, I really love your videos because you explain why you do and don't do certain thing. There's nothing I hate more in cooking videos than when they say "now you do this [specific thing]" and then don't explain why. But every time you introduce something new or novel, you explain why you're doing it, and it makes it so much easier to understand everything.

@@SuperAstrophysicist There is actually an authentic Chinese dish called wonton noodles. It’s not really used to extend the wontons but it’s a noodle dish. We don’t serve it in soup broth like this of course because this is a noodle dish and as that would be too bland for noodles so the recipe usually calls for seasoned noodles broth to pour over plus other toppings.

Can't wait to try this! I'm A stay at home dad so, I do all of the cooking. My family is going to love this. It's the perfect dish to hide things like onion, which my youngest boy does not like. When I make Fried rice I have to chop the onions very small so he won't notice. Although, calling my fried rice "Goku fried rice", after one of his favorite cartoon characters, does help. lol Keep the awesome videos coming!

Yes, it has racist connotations in Anglophone countries where is it considered a slur for some, but not everyone is aware of them, and not every speaker of English perceives it so, either. As a ESL speaker, "oriental" just means 'eastern' to me. It's used in Spanish all the time. I have no prejudice against Asians, and you can't make me feel bad for using a word that literally means "from the East". It's not even an English word -- it's a Latin one. Get off your high horse and stop virtue signalling on the Internet. 21st century people (especially other immigrants) are not responsible for Western racism and mistreatment of the Chinese and other Asian ethnicities during the 20th century.

A lot of times when people try to explain cooking, they use very vague terms and questionable logic, but this channel is very clear and makes it very friendly to learn. I especially like how nothing goes to waste and that it's okay to use store bought/ pre-made ingredients.

I've been craving wonton soup ever since I saw this video and I just HAD to try out your recipe. My mom used to make wonton soup when I was younger so it's always been a family favorite. I was super patient and went through the steps carefully and I gotta say the spices alone really enhanced the flavor for this dish and I don't think I've ever made a soup so delicious! I sub to many cooking channels on yt especially Asian ones.....and Mandy is my GO-TO for dependably delicious recipes. If you get serious about Asian cooking I highly recommend her episode on starting a Chinese ingredient pantry. Authentic ingredients make all the difference when trying to duplicate your favorite restaurant dishes. Mandy earned a place in may heart for her Char Siu pork recipe. It raises fried rice to a whole new level and I could have never figured it out on my own.

Hello there! I'm 9 months late to see this video but I just wanted to say that I made the wontons today (actually, I made them into dumplings because I accidentally bought round pastry). I've frozen the whole recipe into batches to have for breakfast and there was a little bit of meat mixture left, so I ate it today as a noodle soup. I made the mixture exactly as you suggested, and when I made the noodle soup I just threw the extra mixture into a pot with 2 minute chicken noodles, some grated carrot, chopped mushrooms and spinach. I then topped it off with some of the aromatic oil (just as you suggested). It was divine! I am so happy to have learned this recipe and wanted to let you know that I can't wait till breakfast now. I've always been a fan of the spicy, savoury asian breakfast flavours but never knew how to cook them myself. This is my first ever try and now I'm hooked. Thank you so much! xx

Thank you for this recipe! I used to live in Asia, and I miss the food so much! It's either impossible or very expensive to get wontons like this in my country, so I went to look for the recipe and found yours. It took me a few days to find all of the ingredients, but the result was so good!! My mouth was in heaven... I'm still smiling like an idiot haha

I made this and it was amazing, this was one of many of her recipes that I've made, they never fail to impress my family.
I just cooked this recipe today and the whole process was so much fun! Also, this was so delicious and you’re right, the oil was gold! It truly made the dish at the end. But the caramelized onions and garlic with aromatics were heaven. Thank you!!!

Thank you. Made it for the first time today and it turned out to be a smash hit. I did add a little bit of sugar to balance out the saltiness of the broth. This is now going to feature regularly. The fragrant oil garnishing is absolutely Devine.
