EASY & DELICIOUS Zucchini Bread | Can be gluten, dairy, and sugar free! ⭐️
Welcome back to Marie's Kitchen! Today we are making our FAVORITE Zucchini Bread! ⭐️ It has more zucchini, less oil, no dairy, and less sugar than most. Best of all, it's irresistibly delicious! In this video, I'll also show you how it can be made gluten free (with a gluten free flour blend and oat flour), and sugar free (with a stevia brown sugar substitute)! 💖

INGREDIENTS:
2 cups (280 g) all-purpose flour (or gluten-free flour blend)
1 teaspoon (6 g) baking soda
1 teaspoon (5 g) baking powder
1/2 teaspoon (3 g) Kosher salt
1 Tablespoon (7 g) ground cinnamon
1/2 teaspoon (1/2 g) ground nutmeg
1 cup (160 g) brown sugar, packed
2 large (100 g) eggs
1/2 cup (118 ml) neutral oil, such as light olive oil
2 medium (1 lb., 450 g) zucchini, grated
INSTRUCTIONS:
Preheat oven to 350 degrees F (176 C). Line a baking sheet with parchment paper. Place three small paper loaf pans (about 7x3x2-inches) on the parchment-lined baking sheet. (If not using paper loaf pans, grease the pans with baking spray or butter.)
In a medium bowl, mix together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
In a large bowl, whisk together brown sugar, eggs, and oil. Add grated zucchini to egg mixture and mix again.
Add dry ingredients to wet and mix just to combine. Divide batter evenly between three small loaf pans, and if desired, sprinkle raw sugar and/or chopped walnuts over top.
Bake for 45-50 minutes, or until toothpick inserted into the center comes out clean. Cool slightly, serve, and enjoy!

Another sugar substitute I love is called Swerve, it's available at Walmart. It's diabetic friendly and keto friendly. Your recipe looks delicious and I love zucchini bread.

@@Gnomes22 It doesn't taste sweet in the bread. Actually, I've heard about the sweetener from a video a while back and I gave it a try. It's pretty good.

I watched your pie crust video yesterday and decided to attempt to try making a homemade crust. (For the 100th time in my life) I usually do store bought crust because I suck so bad. My pie crusts shrink so bad that the crust walls are not even at all. They have cracks and one time it was so thick it broke a spatula when trying to cut a slice of pie. 😂 Anyway. I followed your recipe, tips, and hacks. I opened my oven to find a whole pie crust. It had sides intact to where I could actually add a filling to it. Although I didn’t have a filling because I wasn’t expecting to have a usable pie crust. I ended up making a chicken pot pie filling and then made a top crust which also turned out. 😂 It’s not beautiful like yours but it tasted so good. I couldn’t believe I was able to transfer it to a pie plate. It usually tears up and I normally have to toss it. I even took a picture and posted it to fb. 😊 I’m so glad I came across your videos. Thank you!!

I just had to have the thermostat replaced in my oven. When the tech was testing the repair I noticed that when first started up and the readout would say 350 it wasn’t there on the digital test thermometer. I questioned the tech and he said when you first turn oven on to preheat the readout will say one thing but it really won’t be that temp yet. The oven has to heat up the walls, racks, etc. to get a true reading. I found after a true preheat the reading on the oven thermometer is true and holds.
Can u use Almond Flour instead of regular flour?
