EASY and DELICIOUS Chicken Salad | Light and healthy, so flavorful! 🍋
Welcome back to Marie's Kitchen! (Thanks for your patience ... my father-in-law is very ill, so we've been focused on family these past few weeks.) Today we are making our favorite Easy Chicken Salad! My kids beg for me to send this in their lunches 🤩
This chicken salad is healthier than many, with more Greek yogurt than mayonnaise and lots of flavor from fresh lemon and tarragon. I like to cook the chicken in the Instant Pot (just 6 minutes!), but you can bake, boil, or slow cook the chicken, or even buy it already shredded.
Regarding washing chicken, the USDA recommends not washing meat or poultry before cooking, as washing can splash bacteria around your sink and counter area, and actually increase the risk of cross contamination and food borne illnesses.

INGREDIENTS:
1 to 1.3 lbs. (450 - 600 grams) boneless skinless chicken breasts (2-3 breasts)
3 Tablespoons (45 ml) lemon juice, divided
½ cup (140 g) Greek yogurt
2 Tablespoons (30 g) Hellman’s mayonnaise
¼ cup (40 g) chopped sweetened dried cranberries
2-3 stalks celery, diced
1 Tablespoon (2 g) minced fresh tarragon
Kosher salt
Freshly ground pepper
INSTRUCTIONS:
Place the raw chicken in the inner pot of an Instant Pot. Cover with water. Add 2 Tablespoons lemon juice, generous pinch of salt and a few grinds of pepper. Close and lock the lid, and move the “steam release” switch to “closed.” Cook on high pressure for 6 minutes. Then carefully release the steam (it’s very hot!) and carefully open lid (remaining steam will still be hot). Using tongs, transfer the chicken to a bowl and let cool. Shred the chicken using your fingers, tongs, two forks, or a Kitchen Aid stand mixer.
In a large bowl, mix together 1 Tablespoon (15 g) lemon juice, Greek yogurt, mayonnaise, dried cranberries, celery, tarragon, salt and pepper. Add shredded chicken to mixture and toss to combine. Taste, and season with additional salt and pepper as desired.
Serve on croissants, toasted bread, or a bed of lettuce. Enjoy!

Honestly, I’ve learned the easiest and quickest way to cook the chicken is to poach it in the water, lemon juice and salt.

I Love grapes in my chicken salad!!! I don't add them to the salad!!! I put them on top of the chicken salad when I put it on my sandwich!!! It works and keeps the chicken salad from getting watery!!! God Bless Us All!!!

For great labor, I love my chicken salad dressing. Equal parts real mayo and Original Marzetti slaw dressing. So so good.

I actually think the red grapes taste wonderful in chicken salad. I think I even like them more than cranberries.

Please also convey a recipe for egg salad sandwiches, though I think you can sub in egg for the chicken. These types of sandwiches remind me of my grandmother who loved “tea sandwiches.” She could have devoured tea sandwiches breakfast, lunch and dinner.

Looks delicious! I always cheat and buy my chicken salad but am now inspired to do this on my own. I do also love the grapes in this salad, maybe a touch of green onion too. Thanks for the shredding tip! Blessings to your family at this difficult time.
My grandma always loved big pieces of celery in chicken and egg salad. It gave it texture and crunch. She would slice it 1/4” thick an not slice down the middle if the stalk was under 3/4”. But some of the wide ends she would split to half inch wide. It is a matter of taste really but that was how I grew up. That looks delicious, I will have to try.

Hi Marie, i love your chicken. Salad recipe,i like to put well drained pineapple in mine sometimes I like to change up the fruit flavors now and then i love it on a good fresh croissant .it is delicious however its made.😊

If someone hates celery or any other ingredient it’s so mean to cut it up as small as you possibly can! If you leave it a normal size or alittle larger, at least they can pick it out😂 Edit: this looks really good, I’m gonna try it next time 😋 and OMG your dog is absolutely ADORABLE 💜

I’m so picky about my chicken salad and my tuna salad. For my chicken salad I poach the chicken then cut it in cubes. I add pecans and red seedless grapes and yes Miracle Whip. Miracle Whip is what I was raised on, neither of my parents liked mayonnaise. They only ate it if it was something prepared by someone else. They used Miracle Whip. Since that is what I was raised on and I don’t care for mayonnaise that’s what I use. For my tuna I use chopped boiled eggs and chopped sweet pickle and Miracle Whip. No onion or celery in either one. Like I said I’m picky😂😂😂😂 I’ve never used my mixer to shred the chicken. I usually just cube it but that really looks easy. May have to try it. Also I usually serve it on a croissant

great tip about using the kitchenaid. I remember on hot summer nights growing up my mom would make us a cold dinner. we loved it, egg salad, tuna salad, and maybe cold meat rolled up? I don't think she made the chicken salad but I do love it.
I de-boned a Costco chicken and used the breast meat, other than that I followed your recipe. Really delicious! I put mine on a Sesame Hamberger bun with some lettuce. Thank you!

love that beautiful God's creature. Coco😊 I use pickles and Mayonnaise. Tomatoes. cut up Lettuce And put it in the salad . Red onions. And I make my tuna salad the same way. Oh I forgot. A teaspoon of mustard.😊

I have just learned about the kitchenaid shred technique about 3 months ago! I LOVE it! Chicken burritos are much easier to make now. Also, do you ever do chicken breast from frozen in the instant pot? If so, do you do a lower pressure for more time? Side note, (I don't mean it as critical, but please think about a new paddle. Pieces of the coating may come off in food prep. Come through Kitchenaid 😊
