Cheddar Biscuits

Cheddar Biscuits
1 cup buttermilk*
½ cup or 1 stick butter
2 cups flour
½ tsp baking soda
2 tsp baking powder
1 tsp sugar
1/2 tsp salt
1 ½ cups cheddar cheese, shredded.
¼ cup chives
Line 1 sheet pan with parchment and preheat oven to 425 degrees F.
Melt butter in microwave. In large bowl, mix all dry ingredients, add cheese and chives.
Pour melted butter into buttermilk to mix, add to dry ingredients and stir until combined.
Turn onto a floured surface and gently knead for 30 seconds, fold and turn until no longer sticky.
Flatten out with hands to around 2-inch height. Use biscuit cutter or glass to cut circles out of dough and place on baking sheet.
Bake 10-15 minutes or until lightly browned. Brush with a bit more melted butter and serve!
*or place 1 Tbsp vinegar in a measuring cup and pour in milk until measures 1 cup.
