Catholic Cooking April 2024 || A Book Of Feasts And Seasons!

Our Catholic Cooking for April, 2024 is somewhat of a gamble, to be honest. We're trying out a couple of picnic friendly recipes that may or may not go according to plan... we'll see! Our featured Catholic cookbook is "A Book of Feasts and Seasons" by Joanna Bogle, a British author, but we're also testing out an online recipe find that seems almost too good to be true. We have one recipe that we hope is a sure winner, but really all bets are off in our Catholic kitchen this month. Join us for the show!

    The Catholic All Year blog has some great recipes. I tried the Straw and Hay pasta this month and it was awesome. Easy to make too.

    When I roll out sticky cookie dough, I like to chill it really well and roll it between two pieces of parchment paper. It really helps control the stickiness. When you are rolling it out, if it warms up too much, you can just slide the whole parchment-dough-parchment sandwich back into the freezer or refrigerator for a few minutes to chill it down again. Works really well!

    That's what I do, too! Making sure the dough is properly chilled is a fundamental step, it should've been noted in the recipe.

    Yes- the recipes was somewhat lacking in those type of details. It did note that the dough would be sticky but that we should be able to mold it into a working dough. Hmm....next time we are going straight for the chill!

    7:47 I used to make homemade sauerkraut and one time I accidentally added in a little extra protein while slicing the cabbage on a mandolin. Thank goodness it was set to the finest setting!! 😖

    Fun, as always! I remember seeing Joanna Bogle on EWTN years ago. She had a series on Catholic traditions, I think. It seems like she also cooked? It might have been called Feasts and Seasons? I also want to say she had a program with her husband that was about the crusades? I was a huge EWTN watcher back in the days of little babies in the house.

    We will have to look around and see if we can find any of the old shows- thanks for the tip. We were completely not prepared for the British-ness of this book, lol. A number 5 warm oven? Rubbing the lard and the flour? It would be fun to see her cook in a video...

    A Finn here googled the currant and after seeing pictures of them, I can tell you that they are nothing like raisins, much more sour and less sweet. I would call them berries. Of the different kind of currants my favourites are blackcurrants. They are a little sweeter than the red ones, but still nothing like the sweetness of raisins. I put blackcurrants into my oatmeal and I really like them.

    Good to know! We noticed that some of the currant pictures look like raisins and then some are other colors- but it sounds like overall none of them really taste like raisins. We're trying to picture how they would have worked in this recipe... hmm...

    @@catholicmomanddaughter Just to make things more confusing . . . the real currant is related to gooseberries, but Zante currants are raisins made from the 'Black Corinth' grape. Sultanas are raisins made from 'Thompson Seedless' grapes that are treated with sulfur dioxide to prevent them from turning dark. We usually find them sold as golden raisins. Regular raisins are also made from 'Thompson Seedless' (and other varieties), but they're not treated with sulfur dioxide. The real currant is hard to find in the U.S. I have tried them, but I didn't like them much because they are very tart. Europeans like them--they're brought up with them.

    Oh I always get just so hungry watching you cook. I'd be all over the chips. Living in a village where everything is flown or barged in, our fruits & veggies aren't always the freshest or in the best condition. Potatoes fare pretty well. I'm just remembering now growing up ,we would make the potato chips in a cast iron skillet. So good! I'll have to try the microwave method. I've been loving potsticker soup but w/o the potstickers. I have a medical appointment so I have to fly back to the city tomorrow. I hope that the weather behaves since it usually gets foggy in the mornings during spring breakup. Thank you so much for being here for us !

    Currants can be hard to get in my part of the world, we substitute for raisins.
