Catholic Cooking March 2024 II 40 Days Of Soup...and Bagels!

Welcome to our March edition of Catholic Cooking! We're trying something a little different in the kitchen here this spring...two of our recipes this time are from free digital online Catholic cookbooks! "40 Days of Soup" from Ave Maria Press and "The Meatless Friday Cookbook" from St. Gabriel Radio are two Catholic cookbooks that are free for anyone to use, and the recipes are great! Here at the end of Lent we've got you covered for two interesting meatless Catholic meals, plus we are trying our hand at making homemade bagels... yum!

    March 19th……the feast of St. Joseph 🤎 St. Joseph Cakes were a part of our family tradition when I was growing up. They’re easy to make and de-licious! They taste like the funnel cakes at the fair. 3 1/2 cups sifted flour 3 1/2 cups milk 1 1/2 tsp. salt 3/4 stick butter 1 cup sugar 2 tsp. vanilla 1 dozen eggs Heat milk, sugar, salt and butter to a hot degree. Add flour until it forms a ball. Put in mixer to get any lumps out. Cool, then add eggs and vanilla. (It will pull away from the pan.) Fry a tsp. at a time in hot grease. Sprinkle with powdered sugar. Enjoy 😊 St. Joseph pray for us ♥️

    Homemade usually tastes so much better! Time can definitely be a factor here, though. Also- lol, we are not always experts in the kitchen :)

    I’ve had this pumpkin recipe as a tradition around the Christmas holidays and it is the best soup ever. You can add a little spicy hotness with cayenne or pepper flakes if that is tolerated in your family. It could be made anytime. 👍🏼🙏🏻😄

    Great job, you guys! I can’t believe you homemade bagels! Impressive. I’ve actually blended cottage cheese so it’s more like a spread and it’s good with berries. I’d love to try the bagel with cottage cheese and fruit!

    In NZ we had pumpkin soup as a staple. We can’t buy canned pumpkin at all. It’s all fresh and needs to be cut and cooked. We also eat pumpkin roasted as a side dish even in salads.

    That's so interesting, Ally. Here pumpkin tends to be a seasonal item for most people, usually from a can. Fresh pumpkin probably tastes much better!

    Oh how fun! Oh I am just so impressed with how well the bagels came out. You ladies always get me worried now every time you have a bread recipe. But you know what, one of my fav dinner roll recipes is a pumpkin dinner roll that you ought to try if you still have the pumpkin left. Great job today!! Thank you for being here with us !

    Lol- the bagels could have gone either way. The crew here is currently on strike against any more pumpkin muffins, but pumpkin rolls are a whole different thing, right?

    Congrats on your cooking victories. I am impressed by all of your success. Just curious what kind of cottage cheese you used? I have some at home that is pretty "wet." I cannot imagine making a spread out of it. Looking forward to seeing more cooking next month.

    Hi, Ann- yes, ours was pretty wet also, so we spread it on the bagels just like jelly. Another viewer mentioned pureeing the cottage cheese in a blender to make it more uniform and spreadable... maybe we will try that next!

    If you want a great tasting bagel find a recipe where you use a sourdough starter, make the starter or borrow some and they'll come out marvellous, darlings!!
