Cantonese style white sugar cake: simple ingredients, easy to make at home

Today's Tips:
Ingredients: 200 grams of sticky rice flour, 100 grams of sugar, 360 grams of hot water,
3 g high sugar resistant yeast, 5 g corn oil
Precautions:
The fermentation time of the dough is between 1.5-2 hours, and there will be a lot of bubbles on the surface
When steaming, use cold water to make the internal dough more delicate.

I made this for the first time. I used normal yeast and it turned out really good, it doesn’t have a sour taste. I would still recommend to put a little more sugar. I’m a hong konger who moved to the UK and this is my favourite food. Thank you so much for this recipe.

今日小貼士: 配料:粘米粉200克,白糖100克,熱水360克, 耐高糖酵母3克,玉米油5克 註意事項: 米漿發酵時間在1.5-2小時之間,表面有很多小氣 泡即發酵好了,蒸的時候冷水上鍋蒸出來內部組織 更細膩哦。

很好吃,方子很好
0:8 melt sugar + water, when sugar liquid beLow 60 C add rice flour stir well 0:41 warm the batter , this is half cook, do not over cook 1:04 when the batter no longer warm to touch add 3 gr yeast yeast stir . Cove plastic & proof 1.5 hour , then add 5gr corn oil and mix well , pour to oiled round plate rest 20 mins 2:49 steam high heat 20 mins

英文翻译有错误 粘米粉是Rice flour 不是sticky rice flour Sticky rice flour多数指糯米粉

你好 小坏。 我的成品有些粘粘的,不过味道是对的。 为什么呢?
I tried other recipe before, I think we MUST let it rise to double before steaming it so that it will be much softer.

It wont rise much. When you see bubbles on the surface, it is ready to steam.

謝謝分享。怕胖減了糖,酵母用了 active dry yeast,發酵跟妳花了 1.5 小時。成功做出但味道還是甜中帶酸 (兒時吃到的味道),請問有方法避免嗎?
