I canned 4 large 2 lb bags of cranberries yesterday. The way I do mine is a spinoff from a RAW cranberry relish that my mother use to make. I use equal amounts of diced pears and apples. Grind up whole oranges peeling and all. Combined them all in a sauce pan to cook. And then add sugar to taste. And then process them. I prefer to water bath can mine and that’s what I did. It is so delicious. There’s no recipe for this. it’s about the same amount of apples pears and cranberries. And probably one to four oranges depending on how many fruits you cube. Cook sweeten and can. So good. We use ours on top of oatmeal. It’s the best. After watching the complete video. I left mine all chunky. Chunky pears chunky apples chunky cranberry the only thing I ground up was the oranges.

Rise and go through those bags of cranberries I pulled out over 15 berries that where rotted mushy or just needed to go into the compost. We gave those to the chickens. The rinse water was also full of particles as I double rinsed them. 3 bags of berries I bought and each bag had about the same results. I was making a fermented cranberry jar with honey and stuff to sit out 30 days.

I love that you pureed the fruit so there's no waste or dehydrating the pulp! I love how easy this seemed and that I can put into smaller jars because a whole store bought can is too much for us. Now you got me thinking about the 2 cans I have if it's possible to recan them...ugh, you get me into trouble more often than you know! LOL

This looks so easy. How about using jelly jars to give as gifts for your single friends or the elderly, who just don't eat as much? You also just reminded me of the best cranberries I ever had. Spice it up with cloves, nutmeg & orange peel. A splash of spiced rum & a dollop of honey. Yummy Keep on cooking & canning girl...love your channel!!

I make orange cranberry sauce. It's always a hit and sooo easy! ½ cup fresh orange juice, from two oranges ½ cup water ¾ cup plus 2 tablespoons sugar 1 (12 oz) bag fresh or frozen cranberries (do not use dried) Zest of one orange, about 2 teaspoons Pinch salt Bring the water, juice and sugar to a boil (or at least heat until the sugar dissolves). Add the cranberries, zest and salt and cook down to desired thickness.

I love this idea! I'm going to make some with the open kettle method, since the cranberries are acidic and so is the large amount of sugar that's needed to sweeten them. I'll use more water since I'll have to boil my berries for a longer period of time to get them up to temp. I'll also boil my jars and lids to sterilize them. It probably won't be until after Thanksgiving, but I'll let y'all know how it turns out.

Ok, so I just canned my cranberry sauce. However, since I already had a pot of boiling water on the stove, I decided to boil the jars a little. But it was not for 10 mins because I started timing with the chatter, and one of my jars even stuck out of the water. I doubt the sauce inside the jars had enough time to get any hotter. I filled the jars to about ⅛" from the top. They all sealed beautifully. (Not to discredit Leilani's method, but I just want to share how I did it.)

1 bag of cranberries fills a 1 quart jar after sorting and removing any mushy berries. So 2 bags is 4 pints give or take. I see those 6 bags gave you 9 jars not the 12 I assumed you might get. Due to the 10 min boil down time and the air pockets removed once cooked down no more air pockets between berries... GOOD DEAL. I love mine as whole berries but this blender idea is also great I might try that with have the berries and combine them before caning. I'm doing a quarts of fermented cranberries in honey and other goodies that sit 30 days before ready.

I made cranberry sauce for the first time this year! I found that adding orange and lemon zest along with orange and lemon juice, plus a cinnamon stick while it simmered, really brightened and added a more dimensional flavor profile. I also used and immersion blender to purée some of it but just a little.
