Water Bath Canning: Cranberry Sauce

It is fresh cranberry season--just in time for the holidays. This quick and easy cranberry sauce with a hint of orange is delicious! Make lots and water bath can it, or make a little and refrigerate it. Either way, it adds a seasonal flavor to meats or baked goods.

Here is the recipe from the USDA Home Canning Bulletin (Note; I added juice and zest from one orange to the recipe).

We have had requests for the recipe for Cranberry Banana Bread so here is the recipe:
1/3 cup Crisco
2/3 cup sugar
2 eggs
1-3/4 cups flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp soda
1/2 cup chopped nuts (I use pecans)
1 cup mashed bananas (I use 2-3 bananas even if it is more than a cup)
1 cup drained whole-berry cranberry sauce
Cream shortening and sugar; add eggs 1 at a time, beating well. Mix dry ingredients together and add nuts, coating well with the flour. Add flour mixture alternative with mashed bananas to creamed mixture beating well after each addition. Fold in cranberry sauce. Pour into greased and floured loaf pan. Bake at 350F degrees for 60-65 minutes or until done. Cool before slicing.

    I just made this!!! I don’t even care for cranberry sauce but wanted to try making it with adding in the orange since I’ve never tried it with that. It is SOOO DELICIOUS! This morning instead of syrup on our waffles we had them with the orange cranberry sauce! THANK YOU for your instructions :) edit: husband doesn’t like cranberry sauce and said this year he was going to have some 😍 will be making this again.

    Couple helpful hints I have found since making this delicious recipe a few times now. I found some of the thickened cranberry mixture was hard to scrape out of the blender so I added the orange juice to it and swished it around to get everythng that was sticking on the bottom and under the blades. You can also just use an immersion blender right in the pot. Everyone loves this recipe , thank you Pam :)

    @60 years old I really want to learn the ART & SCIENCE of canning. My mother was an avid canner...but I was busy ...engaged elsewhere. I don't have a pressure canner...but I think I have what I need to do a water bath. Have a blessed day. LUCRETIA

    Thanks so much for this video! I canned 16 half pint jars using your recipe..it`s deeelish!! Even hubby, who will eat his traditional spoonful every year as he doesn`t care for cranberries at all..said " Mmmm..that`s good!" :) Think I`ll grab some more while they`re on sale & can up couple more batches for the pantry. No law says can only eat them at holiday time!

    This year, I made a cranberry cream pie for Thanksgiving. The recipe had me make a cranberry curd and I would love to try canning it. I love the freshness from the cranberries with orange zest and juice. Your jam pan with the handle is very nice! I purchased a copper jam pan many years ago and the handles get so hot. I’ve been canning since I was 17 years old.

    There is just something about freshly done jellies cranberry and orange sauce, that makes you think you haven't had cranberries or oranges for a long time! Then to put chopped apples into the mix-- Fall fruit Heaven!

    Rosz: I do not know there are frozen cranberries on the shelves at this time of the year, but it will still be a 4-6 weeks for fresh ones on the stores. Jim

    Cranberry sauce is one of my favorites! One thing I picked-up from a chef is to add a little cinnamon to the sauce after it comes off the heat. It adds a layer of flavor that is perfect for a holiday. Thanks again for another great video!

    I've always hated the cranberry sauce in the can and after I learned to make it fresh I never looked back. I use either apple or cranberry juice to cook the whole cranberries in and add the zest and juice of 1 lemon and 1 tablespoon of salted butter. I've been binge watching your videos and enjoying each one. Thank you again for sharing your recipes.

    You can use Ball jars for this recipe as well, of course. But the Weck jars do a fine job with water bath canning. Thanks for watching and for your comments.

    I am so excited for cranberry season in Wisconsin. My husband is working there right now and will get some fresh from a roadside stand. We often boil the cranberries and add a bit of sugar and after cooled we put a bit of the yummy fruit mixture over cottage cheese. We love it! This year, thanks to you, I will also make our cranberry sauces.

    I use pear honey or apple butter on cottage cheese as my go-to condiment, so now I can add cranberry sauce. I made some yesterday using a different recipe, but after watching this, I think an afternoon run to the store is on my agenda this afternoon. So simple. So good.

    I made a double batch of this earlier and canned it because I can fit 9 pints in my canner and have to make sure it is filled with jars so they don't bounce around. The only thing I did different was add 1Tlemon juice instead of orange juice. Thank you both for the video!!!

    For years I have made fresh cranberry relish. I tried this but added whole ground up oranges peel and all. Mixed with cubed pear and apple. Added the sugar and cooked it as you did. It’s so delicious. My husband and I use it on our morning oatmeal. It’s just fabulous. FYI I use equal amounts of fruit.

    Pam, I made your cranberry sauce. My family loved it. I've discovered, that a teaspoon full in a cup of hot water, makes a wonderful tea. 🎄Oh, I did add 1/2 tsp cinnamon, 1/8 tsp ginger, and 3-4 shakes of ground cloves.

    I’ve never had cranberry sauce but felt compelled to make this because you have never steered me wrong. Not only have I learned how to think objectively about food safety and how to do my own research, but dang! I learned I’m a sucker for homemade cranberry sauce! Question for you, do you have a video on reducing sugar in jams? I know sugar adds some preservative properties and aids the gelling, I’m just wondering if there is a scientific way to reduce the amount of sugar in a recipe like this one. Again, Thank you Pam!

    I like to add a cinnamon stick while cooking the sauce, pulling the stick out before canning or serving and a little Cointreau in the sauce while cooking is a nice touch, too!

    This looks fantastic, and I'm totally in love with your jam pan. Lol. (Edit: for all of my "tut tut, rebel canning is bad", I believe that I did it accidentally. Followed an apple pie filling recipe, but instead of slicing the apples I used my dicer- the lid comes down with a little slam and voila. I thought it wouldn't be a bad idea to have dices for strudels, coffee cakes, and homemade apple pie muffins, where you want apples but not chunks.) Anyway, thank you for teaching us so much!

    I have made cranberry sauce before but I don't know if I still have the recipe. But in the middle of watching this I stopped it to go out to the garage to get the 2 bags of frozen berries and made up a batch. Oh yes it's good. I'm enjoying a small dish with my Ruben sandwich and finish watching the video. And I have 3 full jars and a partial. Thank you Pam for that quick recipe.

    I love making my whole-berry cranberry sauce. It is so delicious. I would love to cook with it, but I don't have any recipes. Maybe sometime you can teach me a chicken or beef recipe using cranberries.

    As enticing as it is to try and copy your bounty, I’m old school when it comes to cranberry sauce. For me, it’s got to be canned -Ocean Spray. Just brings back memories of my parents and home.

    @@RoseRedHomestead this gave me a laugh, my mother was known far and wide for her cooking skills, I occasionally got to stir the pot, but I’ve never aspired to be as good or better. I’m just now, with Pams instruction beginning to believe I might be successful at canning. The canned cranberry jelly was just a fixture on the family holiday table, it brings back wonderful memories. In one of her videos, I got a chuckle when Pam commented her disdain for canned cranberry sauce. I never knew until recently that it’s possible to make our own, so, yes, I get your comment, and meet the challenge.

    I know--it can be very confusing because the measurements are in liters and sometimes the product descriptions are not accurate. The ones I used for the cranberry sauce are 1/5 liter tall mold jars (mold = straight sides) and the Weck product number is 900.     Could you explain how to calculate the measurements for the cranberry. You said 2 lbs equal 8 cups. I’m trying to figure out how many bags I need using 12 oz bags of cranberries. Thanks! Are you weighing them on a scale?

    Your pan you used for cooking the cranberries how big is it? Or how much does it hold quart wise. I have never cooked cranberries but love cranberry sauce.

    I MISS home canning. Since I moved back to California I have only made jam once. I used to can all kinds of stuff, even cantaloupe jam, just to try it... (Spoiler alert it wasn't good) I miss pickling and canning, gotta get back into it.

    I make the jellied and use it for PBJ. A lot of jellies/jams are entirely too sweet. I haven't thought of using the orange juice before.

    Can u show us how u open the jars once they are sealed. I think I'm going to buy a set of these. I love cranberry sauce. I wonder if I can use half cane sugar and half monkfruit sugar to cut down on the carbs.

    To open the jars, you steady the jar with one hand over the glass lid so it won't go flying and then gently pull on the rubber tab until the vacuum is broken. The lid is then free to lift off. I am not familiar with monkfruit sugar but I would encourage you to try it! Thanks for watching.

    I love the look of the Weck jars but I have broken the seal too many times and will not can in them again. Also, they are not practical for me because of the cost. Love the recipe.

    Yes, I have struggled with them for pressure canning, but I usually have success with water bath canning. Glad you like the recipe.

    They are re-usable until they crack or stretch out. I have used some of mine several times and they are still just fine.

    Is it safe to HOME CAN the traditional recipe with the 12 oz pkg (3 cups) cranberries, 1 CUP SUGAR, 3/4 cup water, plus 1/4 cup orange juice, some orange zest too? I have lots of Ocean Spray 12 oz bags in my freezer I could use. I do understand sugar helps with the pectin, I still USUALLY reduce it to 3/4 cup sugar because sugar causes inflammation in some family members. So, I thought I could cut back on the liquids, and maybe substitute with 1 Tbsp orange juice concentrate but still add in zest, since I do have several oranges on hand. ANY THOUGHTS? P.S. I am excited to try your Cranberry Banana Bread but I will need to make ours Gluten Free. I will attempt with Bob's Red Mill 1:1 flour. If that fails, I will keep trying because it sounds delicious. Thank you and your husband for all the hard work and research. I am so thrilled I found your channel. You are knowledgeable and such a delight!
