I bought those cases years ago to organize pictures and negatives, and never got around to it. Honestly, they sat empty for 5 plus years haha. Last year I started using them for my seeds. They are so perfect for seeds!! You will love them! :)

I'm with you on the Cilantro!!!! I love it... I have grown it for more than 30 years now... I plant it thicker than what the package says to plant... I also let it go to seed at the end of the growing season... I also have some growing in my kitchen so that I have it anytime I need some... Adding oregano can give you a little bit more variety to your salsa too... I have added it when I open a new jar and still got the same results as when I canned with it... You are truly a blessing to watch. I love seeing the younger generation carrying on the tradition of preservation...

Love your channel. You may already know this. When canning and following recipe it is best to leave the liquid in the recipe. If the contents are too think the heat can not penetrate to the center and may cause problems. Bacteria growth, failed seals etc.

Yes! Also, the required acid she added was liquid lemon juice, part of which she then strained off before canning the salsa. This could result, I believe, in making the salsa not acidic enough to safely can.

Dehydrated or freeze dried tomato powder is awesome for thickening your salsa and sauces. You do not lose the fresh tomato taste. You enhance it.
I love cilantro!! The more the better! I've never put lemon juice or vinegar in salsa. We use lime juice. It's sooo good!!

I use lime juice also. I've always used it in my homemade pico de gayo, so I started using it for my salsa. Love it!

Yes! My recipe actually uses half lime and half vinegar and I think it’s perfect. I also like the Santa Cruz lime juice.

@Julie Phillips yep. I've been using it for years. It's more acidic than lemon juice and has a better flavor than lemon because you can taste more of the natural other salsa flavors. With lemon sometimes that's all you can taste. 😉

I use fresh mayer lemon juice a lot with cilantro. I actually bought a tree a few months ago! It's a baby so hopefully it will flower in 2023.

My local nursery just told me we don't grow good tomatoes down here because of a fly issue. What?!! They recommended I just buy tomatoes this year.

@@LittleBitOfSunshine4u what zone are you in? I'm in 6ab, and I deal with Japanese bettles, aphids and tomatoe flies as well. You can try need oil or garlic spray. Or using marigold, garlic, mint and cilantro as deterrent.

This is SO helpful. I love good salsa AND seasoned tomato juice. I am a newbie to canning and there's SO much to learn. There really is a science to all of it! Funny thing...my husband and I used to hate cilantro. Absolutely couldn't stand it. Found out recently that it's actually in our genes whether or not it tastes soapy to a person!! Who knew??? Thanks

I don’t know why I never thought to strain my salsa. I was struggling with liquidy salsa. Now I know to save that liquid and use it for other things. Thanks!

I'm a no cilantro thanks which was why I started canning my own salsa many years ago... I like the sub of lemon juice for the vinegar (news to me) and might try that one next year!
I have never thought of straining it and using the seasoned juice for other recipes. So smart!

I stopped peeling my tomatoes a few years ago. The best thing i ever decided to do. Changed me from dredding it to enjoying it! I notice no difference and maybe even gain some nutrients 🙂

I have made this recipe and instead of the lemon juice I used citric acid in place and that way I can taste more of the salsa ingredients but I do like some lemon flavoring. Thank you and love watching your channel.

Thank you for sharing. This is my first time watching your channel. I'm a cilantro lover, as well. Using lemon juice in salsa instead of vinegar makes a lot of since. Canning the excess liquid is a brilliant idea. I imagine it would make a wonderful base for tortilla soup.
Congrats for putting together an almost entirely home-grown salsa! That's an achievement, for sure. Totally with you on the addition of spices like cumin ~ it's really better to taste and see if you like it or need it. No point going to all that work ~ especially with your own garden produce ~ and then not enjoy the final product. Thanks for a great video! 🙂

Make sure you don’t overtighten your jars - the lids can get really wonky and fail to seal (they indent oddly) if they are. Just in case that happens that’s why! I usually twist them on just with the tips of my fingers so that I know they aren’t too tight. that way the air can escape during the processing like it should.

I absolutely enjoy watching your videos! You have things so put together, thought through and are so organized! Love it! This looks like a great recipe to try. QUESTION: I have a glass flat top stove too. I noticed the canner you use. Those aren’t recommended for glass top from what I remember because of the design of the bottom, however, I wanted to know if you yourself have ever had any issues? I love the design of them but was nervous to use that type because of having a glass top and not gas. So I always use my steam canner or pressure cooker pot as a water bath. I trust your judgement! 🙂

U can buy that side electric element thing.Can not think of name.I use smooth top for SS pot, Presto canner,& mirror canner no issues.SS @ dollar general for 10.00 bucks plus lifter.

Lovely recipe. I think I would have canned the salsa with the juice in order to not change the ratio of acidic liquid vs solids and strain as I open the jars. Tfs

Good point! I think you are correct that it would change the acidity of the canned salsa, making this recipe unsafe.

Yes... Technically, you are not to change any ratios to stay strictly safe. Make it and can it as written. If you want it thickened later, you could add some powdered tomato.,....

I wouldn't strain,Canning thins down salsa.While water bath canning does not thin it down.pressure canning Cooks It MORE.& ITS more Thinner.Since it was chunky,& u wanted it with no liquid...You can add Tomatoes paste to thicken.You could use an immersion blender to make smoother...Instead of removing the liquid,Which changes the PH balance...... That's lots of lemon juice,But then vinegar gets more twangy as it Sets...if too Twangy after opening,Add sugar to cut the twang. ...

Isn't it a food safety issue if you're straining the salsa? If you're draining out the liquid with lemon juice you won't have enough ratio of lemon juice : non-acidic ingredients in each jar I think. Better to bottle with the liquid distributed into the salsa then drain each jar before using/serving if needed. Also FYI the recipe ingredients list seems to have an error - it says 10c cored tomatillos not tomatoes :)

You are correct, straining the liquid changed the proportions where it is no longer an approved recipe. Water bathing salsa in quart jars is not an approved method either. Newbies should not follow this example.

That is my thoughts too. If you don't want the juice in the salsa you should either... 1. Strain tomatoes before measuring in the beginning 2. Cook down the tomatoes then add in the rest of the ingredients when the tomatoes are less soupy 3. Add in the tomato paste to help thicken it according to measurements in recipe On a side note, I can't have cilantro. I am allergic. It bums my husband when I don't use it. But I surprise him putting it I'm fresh for him when we are going to eat it (of course is a separate bowl from mine)

@@marandasmith4158 Yep! I typically *lightly* strain tomatoes before making preserves with them. If I make salsa and it ends up soupier than I want, it's easy to just drain off a bit of the liquid when you open the jar. You could even preserve the liquid in the fridge if you wanted. Totally safe to do it this way unlike the method in the video.

I am very much a newbie and this was the exact question I was looking for. I agree that I don’t like too liquidy salsa but my concern was the liquid was partially from the lemon juice and I thought that’s what’s needed to keep it safe?
I'm genuinely curious if the ratio of ingredients is so critical for canned foods then how is it ok to keep the juice separate? Wouldn't that disrupt the balance of both products?

I agree. The juice would seem like it was more acidic and the salsa less so. When I canned salsa, I skinned the tomatoes using boiling water and then cut them in half and gave them a squeeze into a juice bowl before adding the acid. 🤷🏻♀️ I’m excited to try the tomatillo salsa she has made in the past.

That was my question also. If adding the lemon juice makes it safe to can seems like straining the juice out would make it less acidic.
