    I've used pineapple for years as a tenderizer on cheaper cuts of steak and venison. Works great. After about an hour I would add some worcester sauce, olive oil and some garlic and put back in fridge for an hour. Take it out and let sit at room temperature for about 20 minutes before cooking.

    Actually, the core has more bromelain in it which is what makes stuff tender and most people throw it away. Eat the fruit and use the core for tenderizing meat. Win win.

    After experimentation, Guga said 2 hours is the sweet spot for the pineapple tenderization, definitely not more than 2-3 hours or it starts to get weird and over like 6-7 hours it just gets nasty/inedible.

    Using pineapple is a hassle. It is faster and cheaper to soak the steaks in a bottle of Perrier with lemon or perrier with lime for one hour and you don't need to rinse them before using a rub or marinade of your choice.

    apparently, as you eat pineapple, the pineapple eats you, because of those tenderising enzymes. Those enzymes react with the proteins in your mouth when you eat pineapple which is why your tongue feels rough after eating pineapple. This means it's essentially breaking down your tissue and dissolving it, which is kinda eating you back. Fun fact!

    Instead of griping that there's no recipe (because I will keep this idea in my pocket) I've copied it here. Sam please Make America Cook Again by sharing recipes! Steak Sandwich from STCG In advance: Make a sauce with 1/4 C mayo TBSP steak sauce Splash of oil Dash of steak seasoning Mix Dress some arugula with oil S&P Put out gorgonzola crumbles to get to room temp Begin: Grill steaks, let the rest. Meanwhile, Pan fry red onion, when near finished, season with S&P plus oil Pan fry cremini mushrooms, when near finished, press a clove of garlic, 2 TBSP soy, S&P. Toast ciabatta rolls Assemble: Spread sauce on toasted ciabatta Lay the dressed greens down Lay on the steak, sliced thin against the grain and chopped small Lay on the red onions Lay on crumbled Gorgonzola Finish with mushrooms Put the lid on

    @@brianchadwell2 Chucks only bad if you cook it like a more expensive steak. It needs to be thick and slow cooked in braising, stews, slow cooked ragu's etc. And its great for grinding up fresh into burger meat because of the fat content, gives you a good ratio of fat to meat. The cuts shown here are too lean for burgers though

    Started watching your channel back in March when I wanted to cook my own steaks. Your reverse sear method on ribeyes is amazing and perfect for my small apartment kitchen. Been a huge fan ever since! Just about a year ago I was eating bland chicken and broccoli college meal preps that I had to drench in soy sauce in order to eat it.     Rich Newell well the steak isn’t $1 it’s probably more like $8(and that’s a long shot it’s more like $14 but idk let’s say $8) and he’s showing you this as a example, in a normal situation you would want to make a lot of steak and use one pineapple making $60 worth of cheap steak into not so bad steaks with a $5 pineapple

    The enzyme that breaks down the protein structure is called "Bromelain." It's actually much more concentrated in the skin, stem, and core than in the flesh itself, so you should do this a bit differently. You can just remove most of the crown, cut the whole pineapple into maybe 4 pieces, throw those in a good blender, and use that. You rinse it all off anyway, it's a lot easier, and it's a lot more effective. ALSO, you should let the tenderized steak sit on a rack for 30 minutes to 1 hour after you've rinsed and dried it. The reason it doesn't caramelize is because there's a lot of moisture left over.

The main thing I've done since watching STCG is upped my cooking game from boring housewifey cooking, you know, mushroom soup, dried onion mix, tossing everthing into a crockpot.....it tasted alright. Now I'm buying so much produce and good quality meats. I'm actually becoming a damn good cook, except for my knife skills. I have nice nails and I'm not about to take them off to cut vegetables at lightning speed. Priorities!(its a girl thing) So I take my time. It all gets prepped eventually.

    Fyi, the best part if the pineapple to use to break down the steak is actually the outer rind. Puree it just like you did with the edible part. Bonus; that leaves you the edible part to actually eat.

    Steak needs to be as dry as possible before you sear. Itll end up steaming the outside if its too wet. Absolutely love everything about this channel. Thank you for what you do.

    But when you do thin steaks it’s better to just use the flesh. 1. Less harsh 2. Better taste Idk if you’ve ever had over tenderized steak but it’s horrible and tastes like beefy mud.

    A buddy of mine in the Army was stationed in, ironically, Hawaii and he met a chef there who used kiwi instead of pineapple. We tried it back home here the same way you did it and it was amazing how tender it made the steaks!

    Love the vids, the sandwich looked epic, but HP ain’t no steak sauce. We use it for breakfasts. Typically in bacon sandwiches but goes good with sausage, beans, egg, hash browns etc.

    Could be. ALso, when he slices them it appeared to me that the charred steak (cooked more medium rare) was on a hotter spot. THe pinepple steak had no char and was very rare.

    It has no colour due to the chemical reactions made by the pineapple. It also foes not have a profound crust due to the same thing. When you try it yourself you will see.

    Try green papaya skin - process it to a paste and leave it on the steak for couple hours at room temp. It works much better than pineapple.

    Yeah the pineapple steak was almost purple on the inside. Definitely raw in the middle. I like a rare steak, but that thing was raw.

    My local grocer always has sirloin ball tip on hand and usually for rather cheap. I think they're actually a pretty good cut for the price. Usually tender, especially with a marinade, decent thickness, and taste like beef. But I do agree that you gotta buy a nice ribeye once in a while.
