Actually, you can vacuum seal using water and it works pretty well. But I'm not sure that the bags he used would be water proof. I know he said that the moisture can go out but not come back in. So, its a possibility and is worth trying.
I'll never envy anyone as much as i envy Angel for getting all the steaks Guga makes

I learned from my grandparents that honey also used to tenderize meat. It also has enzymes to soften meat like pineapple. You can also use the honey to add in the sauce too

The question is price. If you're going for Eye Round by choice then you're most likely thinking about price. Checking out Google, pineapples are on average $2-4 per fruit as opposed to honey being on average $5-10 per pound. Since you're gonna rinse the steaks off, it would seem better to waste a pineapple than honey.

You also need to know that honey will pull the moisture out of the meat, which could affect the tenderness of the meat

So, Pineapple seems like an awesome tenderizer. QUESTION: Would I be able to tenderize with Pineapple, rinse completely, then dryage for 45 days in the fridge, then cook to get both the tenderness and the flavor profiles, combined?

I think he’s dividing the price among each “steak” cut from the cheap hunk of meat he started with. The round cut is a cheap stew meat for about $6-10 depending on the quality and how quick they need to get it off the shelf before it starts “dry aging” lol

You can see that he really needs to push the knife down in order to cut it. If you look at his hands more, you can tell it took some effort.

Never heard of dry age a piece of meat. Also using the pineapple with the skin was new for me too. It does make a lot of sense. Amazon car hop trays.
I just want to say something in general, guga is amazing and because of him i have tried a few in house things. This guy is top class cook and i do wish i could cook as good as him one day. I dry brine my meats and try to find ways to make things tender that is though before i out it in to cook. You keep it up, awesome vids

Funny story, so a couple of years back I used to be a regular franchise diner.. They offered a $10, steak, 2 sides and a drink. I was skeptical to try a $10 steak that included a full meal, but after the first time I was sold. Ate there probably 3 times a week.. just couldn't figure out how on earth they were offering that deal.. the steak was almost great- comparable to some $25-30 steaks I've had. One day I finally asked what cut they were, they said a cheap sirloin, but they soaked them in pineapple each morning.. I figured the waitress was lying.. but now I've got to try it!

i've been wondering what effect it would have to cut the "steaks" of an eye round with the grain- so that the final cuts are against the grain! thin cut against the grain works with other leaner cuts that also have bigger fibers, so it could be worth trying 🤔

@@johnkean6852 Gourmet method: to each piece, his role. Eye-round are not a piece of beef for steaks, it's for low cooking like stews ^^ I think the best would be a roast, or a carpaccio (very fine strips of raw beef, with a little of olive oil, lime juice and parmigiano it's delicious ^^).

We air dry meat in South Africa with several spices and salt to make a delicacy called Biltong, that looks almost like that.

That's why I cant bulk buy meat (the only affordable way to buy it really). I either eat it all, which isnt an efficient use of grocery money, or it gets forgotten in my freezer and by the time i ull it out it looks like one of those mammoths they pull out of the permafrost in siberia.
