Cabbage stuffing, Dolmeh Kalam, Persian Stuffed Cabbage Leaves top with Green Apples دلمه کلم

1 large Cabbage, washed, center core removed
6-8 cups of water
1 Tsp Salt
1/2 C Vinegar
Meat Sauce:
1 lb. Ground Beef
About 6 Tsp Veg. oil
1 C Tomato sauce (or 3 large tomatoes, pureed)
1 large Onion, finely chopped
1 Tsp Tomato paste
1/2 cup water
1 tsp turmeric
1/4 tsp Dry Mint
1/4 tsp Coriander Powder
Salt, Black Pepper &
Lemon juice (as much as you like)
Combine:
Meat Sauce
2 C White Basmati Rice (cooked )
2 C Fresh Herbs (a combination of flat-leaf Parsley, Cilantro, Green Onion, Basil or/and Tarragon , a little Mint) washed, hard stems removed and chopped
Salt, Black Pepper and
Lemon juice (as much as you like)
1/3 of Tomato sauce
Tomato Sauce:
2 Tsp Veg. Oil
1 & 1/2 C Tomato Sauce
Trader Joe's Fried Onion Pieces
Salt, Black Pepper, Lemon juice and Sugar ( as much as you like)
1/4 tsp dry Mint
1 & 1/2 C Water
1 tsp Huy Fong Sambal Oelek Chili Paste
Topping:
2 Granny Smith
