Let's make some Armenian food today with dolmas!!!

INGREDIENTS:
1 cabbage
1 pound (500 grams) ground beef meat
1 bunch of fresh parsley
1 onion
2/3 cup of uncooked white rice
2 teaspoons of salt, 1 teaspoon pepper, and 1 teaspoons paprika
other spices such a cumin and chili pepper (optional)
2 tablespoons plain tomato sauce
Water + salt

    I made these and followed the recipe, with the exception of adding some cardamom, cumin, and cayenne pepper, and swapping beef mince for la,b. They worked perfectly. You are right. They are even tastier the next day. We dipped them in soy sauce, which worked very nicely. Thanks xo

    Dolma meaning "filling" in Turkish, is the name for a number of dishes which are common in eastern Mediterranean and Caucasian cuisines. Usually, a kind of vegetable is filled with rice and chopped or ground meat. Instead of a vegetable, vine leaves are sometimes used. In 2017, dolma making in Azerbaijan was included in the UNESCO Intangible Cultural Heritage Lists. The tradition is present throughout the Republic of Azerbaijan, and is perceived as a central culinary practice in all of its regions.

    In Serbia, a similar thing we make is called "Sarma". It's DELICIOUS! I love it! It's made with sour cabbage and then the filling is similar to this, ground beef, rice, salt&pepper, paprika powder, maybe something else lol! You put it all in a pot with some bay leaves and allow them to cook for a longer time! :)

    Just a tip for everyone. I did try to take out the cabbage leaves and it was very hard. My suggestion is to boil the whole cabbage instead of taking the leaves out first.

    +Maria Kopanelou in Armenia we also use yogurt as we sat MATSUN as well as we use dry fruit to give more flavour to this dish.Also we name it TOLMA but not Dolma.... name that appears here is wrong

    Maria Kopanelou yes, that's the Turkish version; Armenian version is TOLMA and I posted etymology above :) the original name comes from Armenian version and later on Turkish people found an explanation of their own version :) each nation have their own name for this, so do Armenians :)

    In Greece we also make them with wine grape leaves and vegetarian with rice and herbs. You don't need to throw the water after they have been cooked,otherwise they will be tasteless.You add less from the beginning with some olive oil and after they have been cooked you remove it from the heat to cool and add a sauce to thicken it up.In Greece we call it avgolemono (egg and lemon).Serve it with some Greek yogurt on top from some freshness.

    I cook this dish very often. I am just suggesting , cabbage leaves would be very easy to take a part if u take kore of the cabbage and put that site down into boiling water for 2-3 min. and let it cool and separate leaves.. ( In my country ( Bosnia ) we call it SARMA . REGARDS FROM AUSTRALIA..... instead of rice u can put barley and some smoked meat.

    I was going to suggest the same thing - prevents leaves from splitting so much. I have made stuffed cabbage for years. People make it in different ways - I cook mine in tomato sauce with a bit of kraut, tad of brown sugar, vinegar, and lots of paprika. It is one of my favorite dishes. Delicious!

    Excellent tip of using the whole cabbage and after boiling take the leaves off. The leaves would be intact and not torn. I use Savoy cabbage since i find it softer and easier to manage.

    the Armenians from Iran add sweet plums to this dish,and we also add cilantro,green onions,garlic,parsley, we add tomato sauce after everything is mixed and rolled in cabbage. and yes we do call it DOLMA.

    I've only ever had the Greek variety (the ones with grape leaves instead of cabbage... or at least, that's the one that most of the Mediterranean/Greek restaurants in my area usually serve)... but it's nice to see this version. Can't wait to make it for myself and try it!

    why ppl are fighting?? First time I knew the history about Dolma. I am from Bangladesh (south Asia), we also make this item but in a different way like we use tomatoes or some other vegetables which can be stuffed with kima mixture. generation after generation everyone making this. I even never asked anyone I though this is originally our cuisine.... lolzzz. Thanks for let us know the history of Dolma.

    Try this dish with adding some tomato paste and have lemon juice to the water, and cook it for 45 min on low heat. After that turn off the heat and spread some dry mint and drizzle of olive oil, then let it set for 20 min with the led have open, and serve yummy.

    It makes me feel really sick how people are intolerant to other cultures and suddenly jump in the air how things are better in their own culture. This is the way Dolma is cooked in Armenia. Simple and still very delicious! By the way, do NOT attack me, I'm not Armenian.

    Tolma pronounced with T is authentic Armenian dish with its origins deeply rooted in the Armenian culture. Tolma is derived from an Armenian word that means grape vine. This delicious dish is made by many different cultures now days and that's perfectly OKAY! But it's important to remember that it's Armenian and NOT (shamelessly) appropriate it. Let's give credit where credit is appropriately due and this one goes to the Armenian culture!

    In România, we have sour cabbage for this recipe and the meat is pork belly to be tender , and onions are sote in fat of pork. It is a traditional dish for Cristhmas . It is a verry good dish after 2/3days . It is name "sarmale" .

    Oh I love this!! My favourite food! You can wake me up for this always hahah. I use another type of cabbage and the leaves are thinner so its easier to roll them up. What I also do is to cut a lot of garlic and squeeze 3 to 4 lemons and put a little of boiled water with the lemon juice and the garlic so they will get a super great taste! :)) it goes so great to eat it with yoghurt... this is kinda how they prepare it in my country Lebanon. You should give it a try! 😁 you have great recipes and I'm preparing your recipes often :D

    it will be more rice instead of meat and also you will add chunks of peppers, zucchini, garlic, onion, parsley, etc. this will give it flavor . :)

    Dolma, dolmatis etc means "stuffed" in Turkish. The reason Armenians and Greeks use the term it's because they were under Ottoman rule for over 500 years and had to use the Turkish language. Therefore any vegetable that is stuffed - could be vine leaves, cabbage leaves , green peppers, potatoes, mussels etc - is called dolma.

    Ok. This is NOT, I repeat NOT sarma. Sarma is made with sauercraut leaves or pickled cabbage leaves filled with minced meat rice onion garlic paprika powder and some well-chopped or minced smoked meat as well. All is mixed together well and stuffed into the sour cabbage leaves. You also put some chopped leaves under and on top of the rolls in the pan. Pour water and let it simmer for two hours, adding water if necessary. That is it. No tomatoes, parsley or anything else is needed. Greetings from Serbia.

    this is not armenian food. DOLMA is a turkish word mean stuffed. This is old ottoman cuisine spread all over world. Actually dolma is not make with leaf. Dolma made with round green pepper. This food's name is yaprak sarması. You must search as Yaprak Sarması. this is turkish food.

    TOLMA is the Armenian for this dish. And it has nothing to do with the country named in the video! It is a purely Armenian dish and has 100ds of ways we cooked it - stuffed in grape leave, in veggies (tomato, eggplant, pepper), in various fruits mainly apple, as well as onions. So please-please do NOT ever call it Turkish - where were the warrior Tatars when we Armenian women cooked meals for their families and guests

    What a stupid stupid infromation, Coca Cola is "older" Than Azerbaijan?! If this is true then it applies to Armenia and Geogria as well as current day Caucasian republics became independet in 1918, Azerbaijan as name has long been used in historical accounts the name Atropatena is origin of the word, while Armenians are gypsies who migrated from Syria/Anatolia to Caucasus!

    Tolma maybe armenian word but not “dolma” ( short form of doldurmaq) which means “to fill” from turkish language!!

    You have to put the whole cabbage in boiling water before you separate it . You did totally opposite way

    Cabbage came out disaster. I was only able to use about 10.

    @@lenak1171 what I do, place the whole thing in boiling water and start removing the leaves starting from outer layer and work my way in. I don’t let the cabbage leaves get too soft . After 5 min of soaking in hot water you start pealing the leaves
