Kalam Polo (Persian Cabbage and Rice) - Cooking with Yousef

Hi friends -
Today, I make "Kalam Polo" (کلم پلو), which is Persian Cabbage & Rice. Like many other Iranian foods, there are regional differences and personal household differences in recipes. I wanted to show you my preferred version, which is a bit different than "Kalam Polo Shirazi", which is the more well-known style.
The differences include the type of cabbage used, and also, whether you are using meatballs or minced ground beef. This also makes for an excellent vegan dish if you exclude the meat, or use a substitute.
At some point, I will show you the "Shirazi" version as well, but for now, please enjoy my favorite Kalam Polo recipe.

    Hello, I just found your channel. I really appreciate all of your videos! My father was Iranian, and sadly he died when I was young. I remember his cooking well, but I never had the opportunity to learn his technique. Thank you for sharing these recipes.

    Dear Arroyeh Yousef- which Iranian city are you from, please? Your recipies are very similar to what I've been cooking for 37 yrs (married to a Shirazian since age 20)- adding my own touches over the years (including home made Adveh for rice and meat where appropriate etc- always curious, always searching recipies and building upon the knowledge). I have enjoyed watching your videos since finding your channel about a week ago. Please keep doing what you are doing! You are so welcoming to your American/non-Persian audience...we appreciate that as our children are part Persian and we want this beautiful culture/cuisine for them as well! I do want to state that one issue many newer cooks (to Persian cuisine) have is that they need the quantities/measurements for the herbs (dry and fresh) and spices... as they are probably still acquiring the over-all "taste" of the particular food being prepared ... then they will gain confidence and prepare to their particular taste/palate as they become more familiar with particular herbs/spices they may not have grown up with. You are probably one of the best in this regard that I've noted to date- Thank you for that understanding! God Bless! Wishing you and yours a Happy Norooz!

    Do you have any suggestions on where to purchase the liquid saffron or do you make your own?

    Hi, yes, just add some hot water to a bit of saffron and mix. If you want to have it extra fragrant, add an ice cube and pour some boiling water on it.

    Agha Yousef, my rice comes out too moist due to the mixture having a lot of juices. Any suggestions?

    Hard to tell, but seems you might have cooked the rice too long before draining. Next time cook it 70% & make sure you drain the water very well before adding to mix.

    Yes, I buy it from several Persian Markets nearby. But I know some bigger chains now carry Sadaf brand herbs. Most Ethnic/Arabic markets will have these items as well.

    @@teresaly278 I can see how it is much harder to find these items outside of where I live, which has a pretty big Iranian population. I suggest looking into buying Sadaf spices online, which is the most prevalent brand for Iranian dried herbs & spices.

    @@CookingWithYousef I live in Logan Utah I can’t buy lamb or even “odd” Cuts of meat here no unsmoked pork belly or oxtails tripe etc just snobby white people food btw I’m white

    Good eye, I believe that was cilantro, but I was just picking them up randomly. i have to go back to these videos and write out the ingredients list like the new ones because of moments like this.

    @@CookingWithYousef It's impossible to find where I live, so I've never used white pepper. Is there a significant taste difference or is it only the color? I'm wondering if it's worth ordering some online.

    @@mustwereallydothis It has a milder flavor and some subtle difference, but imo, not a necessity. I do use it for some foods specifically, but I would feel fine substituting regular black pepper if I didn't have any.
