Burmese Chicken Curry

Burmese chicken curry is a delicious dish that tastes almost like a fusion between Indian style curry with with Thai flavors from Southeast Asia. Join Eric from Simply Elegant Home Cooking as he demonstrates this delicious dish! One of the flavors that gives this dish such a unique and bright flavor is lemongrass, a highly underutilized ingredient in most western kitchens. The lemongrass will give an amazing citrus undertone to complement the garlic and ginger in this amazing curry. While it is not required, Eric highly recommends salting your chicken pieces and allowing them to sit uncovered in the fridge for several hours. This will eliminate any excess moisture to allow a good sear and will also allow the salt to penetrate deep into the chicken for more intense flavor. This dish is best served over steamed jasmine rice.
Ingredients:
1 1/2 to 2 lbs boneless skinless chicken thighs
2 stalks lemongrass
6 to 8 cloves garlic
1 thumb-sized piece ginger
2 medium sized shallots
3 roma tomatoes
2 teaspoons ground turmeric
1/2 teaspoon crushed red pepper flakes
3 tablespoons neutral flavored cooking oil
1 lime
1 bunch cilantro
salt, to taste
jasmine rice, for serving
Directions:
1)Thoroughly dry the chicken thighs with paper towels, trim any excess fat, and cut into LARGE bite-sized pieces.
2)Generously season the chicken thigh pieces with salt in a large bowl. Add the salt gradually while stirring to evenly incorporate.
3)Spread the chicken thigh pieces evenly on a large cooking tray with a rack and allow to sit in the fridge, uncovered, for between 2 to 6 hours.
4)An hour before desired serving time, remove the tray of chicken from the fridge and begin making the curry paste by adding the lemongrass, garlic, ginger, shallots, roma tomatoes, turmeric, crushed red pepper flakes, and 1 tablespoon of the cooking oil into a food processor, along with salt, to taste. Follow the steps in the video for details about how to prep the lemon grass! It is important to use only the innermost portion and discard the fibrous outer layers.
5)Blitz all the curry paste ingredients for 1 to 2 minutes, using a spatula to scrape at the sides several times throughout the process.
6)Add 1 tablespoon of the cooking oil to a dutch oven preheated on medium high, and add in half the chicken to avoid overcrowding the pan. Cook for about 5 minutes, stirring occasionally, until chicken has color on exterior and pinkness is gone.
7)Remove chicken from the dutch oven to a clean plate then repeat the above step with the other half of the chicken.
8)Add the reserved chicken back into the dutch oven, along with the curry paste, and stir to incorporate. Cook for 2 to 3 minutes, stirring regularly, until curry becomes fragrant.
9)Reduce heat to medium low, cover the dutch oven, and cook for about 10 minutes.
10)Remove the lid, stir, increase heat back to medium high, and cook on a rapid simmer for 6 to 8 minutes or until the curry is reduced in volume. Be sure to stir regularly and scrape at the bottom of the pot to avoid sticking.
11)When desired consistency is reached, turn off the heat, add in the juice of half a lime, along with the chopped cilantro. Stir to evenly incorporate.
12)Serve over jasmine rice with lime wedges and additional cilantro and ENJOY!

    Thank you for this version of Curry Chicken. I'm glad it doesn't include coconut milk -- just a personal preference. If I were to include more whole veggies, as I found in Malaysia, the addition of a bit of sugar might be considered. All in all, this is a delicious recipe.

    The dish looks amazing! I like using boneless thighs and cutting them in small pieces certainly shortens the cooking time. Thanks for the pointer on prepping lemongrass. Now I know. Love cilantro and lime. Can’t wait to try!

    Well this is a matter of personal choice, I think 1/2-2/3 pound per person is about the norm but I’ve seen people eat as much as 2 pounds in a single sitting! Not saying I recommend that but it does happen!

    Looks amazing. Do you have to use a Dutch over or is normal sauce pan ok? Also wondering adding fresh peppers to bump the heat up...is that traditional?

    Hi Michael, you can use other types of pans you just need something with a lid. And yes, this is a very versatile dish so some sliced peppers would definitely go well if you’re looking for heat. The amount of crushed red pepper that I used here provides a little bit but not enough to make this a “spicy” dish.
