Burmese Chicken Dal Curry: Protein Packed One Pot Meal

One pot meals are normally bland and boring. Not this one. This Burmese Chicken and Dal Curry is sure to satisfy almost anyone, while also being very quick to throw together. I hope you enjoy this easy one pot meal.
Ingredients:
3/4 cup yellow split peas, soaked
3 pounds boneless skinless chicken thighs, trimmed and cut
1 tablespoon* Paprika
1/2 teaspoon turmeric
1 tablespoon Fish Sauce
2 teaspoons salt
1/3 cup canola oil
1 ounce ginger, peeled and sliced into coins
2.5 cups finely diced yellow onion
1/3 cup finely minced garlic
1 serrano chile, or up to 3 thai chiles
2 bay leaves
3 cups water
1 teaspoon Madras curry powder
1/2 teaspoon Garam Masala
Salt to Satisfaction at the end
Cilantro and Lime for garnish
