    I just sat here and watched this whole thing, the way the knife is so sharp it melts through the meat like butter but also cleaves through the bones is amazing and the technique is phenomenal

    I wonder how long these guys take to learn that level of precision and understanding of the anatomy to be as proficient as possible to not waste any good meat. This is a colossal industry and I understand any slight defects can severely bring down the value of the tuna. The meat looks so healthy and appetizing. Im getting hungry just watching.

    honesly having a sharp knife is like 80% of the work. If you have a shitty knife even cutting a chiken breast is do difficult and dangerous.

    @@miguelelgueta5830 I'm a cook by trade and whole heartedly disagree. You cannot break down a fish with a dull knife, and most people cannot fillet a fish properly with a sharp knife. Sharp knives are definitely more dangerous than dull knives, you're just less likely to hit yourself with it.

    I would suggest looking at some videos on giant bluefin and yellowfin tuna. They’re amazing animals to witness, I’ve been fortunate enough to see some in real life fishing. They’re incredibly powerful and can reach speeds close to 50mph underwater.

    It's amazing. You can see the respect for the meat in his work and movements. I would imagine the carcass will be used to make stock or fish sauce, and no part of the animal will be wasted. It's really a privilege to watch someone work like this. If only everyone in the world approached meat with honor and gratitude

    I was think along similar lines. Seems much more respectful that the U.S.'s factory farming techniques. If an animal is gonna for your consumption, at least have some sort of respect for it rather than just treat it like a throw away.

    The fact that I work in a fish market makes this feel a bit targeted. KZread is really spying on me or something. Aside from that I love how nicely that knife cuts through bone and scales and the slow, methodical cutting. I see a lot of love and dedication and that makes me really very happy. (we have yellowfin tuna imported to us but i’ve never cut something quite that large. I live in the US.)

    I think it’s safe to say 95% of us don’t have ANY knives that sharp in our kitchen. This was just beautiful to watch. I don’t really like tuna, but watching this makes me want some. 🤷🏼‍♂️

    That's not a blue fin tuna. That's for me the most delicious tuna ever. This is a Yellow fin tuna, a very special kind of tuna that doesn't grow as big as blue fin but it's more delicious than the blue fin. You can see that it's very special, when you slice it, it doesn't bleed so many blood compared to the blue fin that when you slice the blue fin, it tends to turn out kind of messy.

    I am very surprised to not see any comments on the state of this species. I am also very impressed by the cutting skills, but we must not forget that bluefin tuna is one of the most critically endangered fish species on the planet, and that exactly what we see here (fisheries and connected market, not people cutting them up). Please keep in mind that we may lose this species to extinction because of sushi when you see videos as this one, even though its a sad thought, awareness is the first step. Thanks for reading

    I love watching the process of food like this. The only thing missing is the fish actually being caught, which may or may not have been interesting depending on how they catch their fish. There are a lot of hands that go into putting that sushi on your plate!
