That seems like a monumental amount of hard work especially considering they have to transport everything to market and set it up. But I guess a fixed routine makes it manageable. How do they keep the bread dry when it rains?

The gazebo we use has 4 side panels, if it starts to rain we just pull the side we need to keep everything nice and dry ❤ As the years go by, it gets easier to manage, but can't say it's an easy task, sometimes (like today) we drive 1.5 hs to go to a market, it is a labor of pure love

How long do you do a bulk fermentation and then how long do you let it sit in the fridge and is it uncovered and does make a difference

It'll depend on room temp, but between 5 and 9 hours bulk, and then fridge for some 12 hs, if baked next day I don't cover, if it'll be there for longer I do cover it or it'll create a skin

They aren't amateur ovens, they are semi professional Artisan bread ovens. Some big people in the baking world say the bake of a Rackmaster is better than many deck ovens! They also happen to be a lot cheaper to run than the big deck ovens, and that's how we manage to stay afloat with the energy prices

J'adhère pas trop au travail en debardeur et les cheveux qui pendouillent. 😅 Mais le pain est beau, alors s'il y a un petit poil dedans c'est pas si grave 😊

Thank you , to making good bread , malt is not important.. Just flour salt yeast / sourdough and water
