Vegetarian Meatballs in spicy Tomato Sauce
Ingredients:
1x400g tin chickpeas, drained
150g green lentils, soaked overnight
150g carrots, peeled and grated
400g courgettes, peeled and chopped
4 cloves garlic, peeled and chopped
3 medium onions, diced
250ml tomato passata
1 large tablespoon tomato purée
1 teaspoon thyme
1 teaspoon mixed herbs
½ teaspoon cayenne pepper
1 large red pepper, cut into chunks
