Hi may I know why is mine super sticky even after kneading for more than 30 minutes And I’m also doing it using hand And it’s sticky So what should I do -like yours is not sticky and smooth when kneading But mine is really sticky so what should I do .’Should I just leave it in airtight container .for 30 minutes and refrigerate it... And by the way my dough smells like it’s soured and vinegary so...is it normal

Different flour different absorption properties, so you can reduce hydration. I used a mixer to knead the dough then only use hand to shape. The dough should knead until its not sticky but smooth. OK.
