Rinse 6 times is too much! I followed your advice and rinsed the mei cai 6 times. Then I tasted it and found it has no more taste. I losf confidence in your advice on the seasoning and I had to watch other people's video to adjust the taste.
Depends on what type of mei cai you used. If you buy from scratch with lots of salt you need a few quick rinsing not soaked n then rinse. You need also to rinse clean of sand n particles. If you buy those that are ready to eat you dont need to rinse at all.. No qualms you can watch others too.

Where is the tofu?It's wrongly called fried egg tofu but should be called steamed eggs cake instead 😂
We called this egg tofu or japanese egg tofu.

You can knead until smooth and elastic. I dont know how long because i never use hand to knead.

If you use all purpose flour it won't be that soft n fluffy. Try use bread flour.

@Wingburner Bread flour has a higher protein content than all-purpose flour, it's able to develop more gluten. This leads to bread with more structure soft n fluffy. If you make a bread with all-purpose flour, the gluten network won't be as strong because of the lower protein content; this means the dough won't be able to stretch as much to accommodate those bubbles, resulting in smaller bubbles and bread with a tighter crumb.
