"Zapekanka" is a Russian cheesecake, but made with Farmer cheese. Perfect for Breakfast!

"Zapekanka" is a dish that is baked into a pie using different ingredients and eggs as binding component. Farmer Cheese Zapekanka is the most popular and usually served for breakfast with Kissel.
Kissel or kisel is a viscous compote, popular as a dessert and as a drink in Northern, Central and Eastern Europe. It consists of the sweetened juice of berries but it is thickened with cornstarch.
You can also serve it with any fruit preserves or honey.
ZAPEKANKA
You will need:
800g/1.7lb Farmer Cheese(Tvorog)
You can choose half fat or full fat one. Or simply make your own.

4-5 eggs
½ salt
4-5 TBSP sugar
1 packet Vanilla Sugar(8g) or 1 TSP Vanilla Extract
Zest from 1 large lemon(about 1 TBSP)
4-5 TBSP fine semolina
3 TBSP sourcream
1 TSP baking powder
1 TSP baking soda
METHOD:
Beat the eggs.
Add salt, sugar, vanilla and zest and mix.
In a large mixing bowl add farmer cheese.
Add egg mixture to it.
Add semolina and sourcream and mix with either hand blender or mash with potato masher to rich much smoother texture.
Add baking powder and baking soda and mix.
Cover and let rest for 10 minutes.
We need semolina to expend a little bit and for baking soda and baking powder to activate.
You will notice that your Zapekanka dough is doubled in size after resting.
You can add 1½ cups of soaked overnight ,drained and dried raisins to it or any other dried fruit you like.
Mix well and transfer to greased baking dish.
Sprinkle ! TBSP of sugar on top.
Bake at 355°F(180°C) for 40-45 minutes or until inserted tooth peak comes out clean.
Cut into squares and serve with Kissel.
KISSEL
1½ cups fresh or frozen berries of your choice(I used cherries)
4-5 TBSP sugar.
2 TBSP corn starch
1½ cups water
METHOD:
In a small sauce pan add berries.
Add sugar and mix.
Bring to boil and cook for 5 minutes.
Add cornstarch mixed in water and cook for another 3 minutes until Kissel thickens up slightly, but still flowable( like in the video).

    Thank you for introducing me to this lovely recipe. I'll have to try it! However I do have to mention that semolina isn't gluten free as it comes from wheat, just to let people know.

    You can add flour, but only 2-3 table spoons.
