"Golubzy"/Russian Stuffed Cabbage Rolls

Stuffed Cabbage Rolls is a a common dish to the cuisines of the Balkans, Central, Eastern Europe, Azerbaijan and Iran, as well as Middle East and West Asia and Northern China.
But is is probably the most popular cabbage dish in Russia, after Borscht of course.
Stuffed Cabbage Rolls:
You will need:
1 cabbage head
For the sauce:
3 medium carrots(grated)
1 large onion
1 large can of San Marzano or any other type of canned tomatoes
5 cloves garlic(pressed)
½ cup of fresh dill and parsley
salt and pepper to taste
1 tbsp butter
2 tbsp cooking oil
Method:
Saute onion in butter and oil( you need 2 onions in total)
Add salt and pepper.
Reserve half for the filling.
In a large sauce pan, add cooking oil.
Add grated carrots and onion.
Add garlic and crushed tomatoes(reserve ½ cup of tomato puree for filling).
Add fresh herbs, salt and pepper.
Set aside.
Filling:
1 lb ground beef
1 lb ground pork
1 onion
1½ cups of rice(cooked to al dente)
fresh herbs(parsley and dill)
½ cup tomato puree
¼ cup cold water
salt and pepper to taste
Combine all ingredients and set aside.
Prepare cabbage leaves.
Trace the core of whole cabbage around with sharp knife.
Place it in a large pot with boiling water core side down.
Remove some of the outer leaves as they start cooking and place them on the paper towel. Repeat the process until you left with pretty much just the core.
To make rolls:
Place a generous amount of filling on the cooked cabbage leef.
Roll tight.
In a large pot, add some of the sauce, then cabbage rolls, then sauce again, then cabbage rolls.
Cover with more sauce and simmer on a low heat for 45 minutes.
Serve with sour cream and fresh dill!

    This is a great recipe. Thank you for posting it. I love the addition of carrots....It must lend a sweetness to the sauce. Usually, as I stack up the cabbage packages, I fill in the gaps with sourkraut as that is how I learned to make them. Its cold and damp.....time to make them...maybe for New Years day dinner.     Love stuffed cabbage, wondeful recipe! Sometimes I use smoked paprika and smoked black pepper in the filling. I have the same knife, love cutting herbes and stuff with it! Thank you!

    Excellent recipe! Subscribed. When visiting St Petersburg, the little cafes all served this standard fare, along with Beet Salad. I loved the cabbage rolls! This looks very authentic, healthy, and delicious. Thank you so much! fyi - Best to substitute with Non-Fat Greek Yoghurt if Sour Cream is too rich. You also get Probiotics.

    You can actually find these in a lot of restaurants in Pennsylvania, which makes sense due to the fact that most people in Pennsylvania are of German origin, and a lot of the rest are Polish or other Slavic (mainly Slovak but also Czech & Russian). Like Pennsylvania is probably one of the few places outside of eastern Europe where you can get Haluski & Pierogi.... Been looking for some good Golabki recipes for for a while, though. :)

    Hi, I love the method of adding tomato to the filling and carrots to the sauce! I would like to know how I can finish cooking them in the oven instead of on the stove if possible please.

    Thank you. You can bake them in the oven @ 350°f for an hour, just make sure you have plenty of sauce around them. Keep covered with foil, if cooking in a baking pan.

    I've been looking for some way to make the filling taste better than plain meat, rice, salt and pepper. Dill does not anything for me. I've tried a little cumin and cinnamon - that seems to do it for me, but next time I will increase them.

    hi Nastassja ! great recipe, I love it without having already tested. It will be on sunday. BUT ! Never ever let Italians see this recipe ! You wrote 'al dente' for rice. In their eyes this is unacceptable, a kind of sin, cause 'al dente' belongs to pasta only like brightness belongs to the sun :-) 'Al dente' is the damn small white (flour) shimmering core within e.g. Spaghetti. As big as a pin's peak. But I know what you mean and for me it's ok. But Italians are different to Germans . . . Viel Glück, meine Liebe !

    You can add water to the meat mix or or some crushed tomatoes. It will make it softer.😊🌹
