I am also a big guacamole fan, but instead of using tortilla or corn chips (due to high carbs and generally being bad for you), I use thick slices of cucumbers to eat my guac (at least 1/4" or thicker). I've taken my cucumber chips and guacamole to parties, and they are always a hit. I never leave the party with any cucumber slices or guacamole for that matter. :)

The Hispanic population used to have such good health stats they called it "The Hispanic Anomaly". It 's gone and now the group has double the diabetes (along with blacks) of whites, Asians have the lowest of all and Native Americans a disaster with the worst rates of diabetes in the world (except for the tiny cluster of super-rich oil sheikhdoms where nobody has to do any labor). It's from eating processed foods instead of what their ancestors ate. Incredibly, as with blacks, as the family incomes went up, their health got worse. They were healthier when they were poorer! I am in a moist, rice growing region where centella asiatica grows well. It is in the parsley family and 20 fresh leaves a day can be added to the guac.

I don't know about a connection between gall bladder and taste. I would say that we all have sociocultural psychosis that we blow off as, "preference." Growing up as anglo, blue collar, Caucasian, my first reaction to cilantro was the same, "soapy." If I were latin or asian culturally, it would be taught as a medical, 5 element theory ingredient.

Guacamole is one of my favorite things to add to salad. The Winter Garden Restaurant on the Coney Island boardwalk in NYC makes an avocado salad which is just all the ingredients in guacamole cut into chunks tossed together with cucumber and a lemony vinaigrette and served over lettuce, very refreshing and delicious.

Onion and tomato fresh pickle : slice 1 small purple or red onion and 2 tomatoes into thin rings. Add a generous amount of sea salt and mix well. Cover for 30 minutes. (Onion will "cook" in the salt - no strong smell of taste) Mix half cup of water and 1 tbsp of apple cider vinegar and 1 tbsp of monk fruit sugar. Stir until sugar dissolves. Pour over onion and tomato. Press little garlic and add it to your fresh pickle. Put into fridge for 30 minutes. Serve with your dinner. Cucumber can be also used instead of tomato. These fresh pickles are very popular in Hungary and super healthy. Some people add dill or parsley, some people also add a tbsp of sour cream. All variations are delicious!
