chef frank has his own channel, "protocooks with chef frank" though the posts are erratic. chef saul also has a channel "Chef Saúl Montiel" though there's only about 20+ videos and he hasn't posted in about a year. enjoy

Chef Saul's spoon drop is the most wholesome thing to happen in kitchen.
I can’t tell you how much I appreciate a chef that takes care of his finger nails and cuticles. Bravo! for taking care of yourself. There are so many chefs/cooks on TV and KZread that have horrible looking nails and it’s so unappetizing. Oh and thank you for showing us the proper way to make guacamole. 🥑🥑🥑🥑🥑🥑

Quick tip. Place the avocados in a sealed gallon-sized ziplock bag along with a tomato and store them in the refrigerator for approximately one to two days to ripen them. The tomato releases ethylene gas, which ripens the avocados. The refrigeration helps maintain the avocados' freshness while they ripen.

Yes and don't skip out on the lime as an ingredient. It's chemicals help the guacamole stay bright green

also the seed of the avocado when placed in the guacamole GREATLY increases the time for the avocado/guacamole to go dark. I thought chef saul was going to mention this. This is useful info if you want to store the guacamole in the fridge @@Kyle-nm1kh

Refrigeration will rob avocado & tomato of flavor & texture. Better to put in brown paper bag to ripen on shelf at room temperature.

Makes no sense to ripen in the cold, also the tomatoes outside the summer are so fake that i doubt they have what to release

I'd love to see two cheffs getting the same random ingredients and they'd have to make dishes out of them. Preferably Chef Saul and Chef Frank. They always have really creative ideas.

Saul is so lovely and adorable
while I've known you traditionally use a molcajete to make guacamole I didn't realize you wanted to crush the cilantro and onions and garlic in there like that! I always just toss them in. (I always use garlic.) Also, I find that when just using a bowl, a squiggly potato masher works wonders for quickly mashing everything up. The wire mashes and the gaps let pieces come through.

As a mexican, I confirm that sometimes we just toss the ingredients without smashing them or using molcajete. It's easier but still tasty. Also, I like adding olive oil and black pepper!

I like a less creamy guacamole personally so I only lightly mash with a fork which also lets pieces squish through

Gotta admit I toss them in, too, but I’m going to do it his way, I bet it gives a huge boost in flavor!
Just did this yesterday!!! Everything in almost exact same molcajete as you. I use about 4 cloves of garlic and skip the tomatoes. Crushing everything in a molcajete takes the flavor to a whole new level!!!!! I use mine every day!
In Northern Europe we don't have a chance to replicate Mexican food properly. Our chillies barely have names (other than jalapeno), and our avocados are all either unripe or overripe - there is no inbetween! Our supermarkets mix a tiny amount of avocado with an amazing amount of mayonnaise, and call it guacamole. We really need to up our game :)

Mexican here. buy the unripe 2 days before preparation let the avocado out of the frigde. Gonna be on point for guacamole.

Saúl rocks!!! almost as much as Guacamole itself! and this Guacamole is legit. Mexican here, Chefs don´t give you this tip, we never slice our hands because we remove the pit and cut the avocado with regular table butter knives, want to cut it while in the shell, also butter knife or a spoon... never cut yourself, no issue at all ever!

What a fun video to watch and I learned a couple things. I don't have a mortar and pestle, I need to get one. Also, I never put onion in mine but will try it next time I make guacamole.
