    In Southeast Texas, we have a local place that smokes their ribs, then deep fries them with a batter. They are amazing. Great video!

    Next time fry the pork belly without removing the skin. That makes it even better. And then you can drop the dusting and the egg wash. Just let the pork belly come up to temp slowly in the pit, with the skin intact. Then let it cool briefly and do a quick fry in very hot oil. Instant success. Every time. Yeah and do score the skin before adding salt and pepper, you can even do shallow cuts into the fat layer. No need to cut into smaller pieces, keep pork belly as large as your fryer can handle. You get the smoke from the BBQ, the slow rendered fat keeps it all juice and moist, and the skin crispens up really fast so that the pork belly don't over cook and dry out. I'll dare you to make the ultimate pork belly.

    In México we call that chicharron for the process, and chicharrones for plural

    It will be serve either with a hot cooked rice or a fried one, with a dip comprising of 1 part soy sauce, half part vinegar, minced red onion and red hot chilli peppers, and an optional half teaspoon of sugar..perfection.. 😄❤️

    I’ve made this several times, never smoked tho just boiled, still does the job. Once it’s cooked dice the pork belly prep cilantro & onions and a signature tomatillo based hot sauce warm tortillas and it’s go time my friend.

    My grandpa used to fry pork cracklin but he used pork belly. he didn't smoked it! Love that stuff!
