I love that Gordan Ramsey video!!! This one and his beef short ribs were some of the first recipes I ever cooked!! So good!!! Do his beef ribs next !!!
Pork ribs are an art of a thousand methods. I've done ribs many styles and many ways. I make as many as I can fit on the pit and I never have left-overs. That's the one problem. I have no "day-after" plan for ribs because I've never had leftovers.
There is a good reason why Gordon Ramsay gets so many views on his videos. He is absolutely brilliant. He inspires people and it looks like he has inspired you as well. I bet your ribs are really good too, and if you want to compare keep this in mind. In that very video Gordon mentions that one of the keys to cooking for yourself is to get to know which ingredients you really like and use them. So it is a personal taste thing, and if you like your ribs better then well done in taking his advice.
Most people don't own a smoker.. Gordon recipe is fire for all of us that yearn for a smoker but are stuck with a regular oven at home. Having said that thise smoked ribs look amazing.

Great vid. - I like to cut my ribs into individual ribs at the start - It exposes a LOT more surface area for smoke and flavors to be absorbed. Of course, you just need to adjust your cooking times to match. Perhaps not "contest ribs" but they sure satisfy the crowd. You should try it this way!
In the south we call those ribs Gordon used "Country Ribs". And there are a LOT of ways to prepare them either on a smoker, grill or oven.

Country style ribs in my region are pork shoulder cut into sections also. That's what they're labeled at the grocery and butcher store. I agree though, what he used in the video had to have been ribs because I saw the rib bones and the curve of the bones in a couple scenes.
He strikes again. Thanks for always making me push my bbq game. I really do appreciate it.

Lol " BBQ has come in to the chat." Morrison cracking me up bro. Another great video.
The issue with this. Is you're comparing an oven method of rib preperation to a smoke/bbq method. Of course the BBQ method is going to taste better because it has more time to infuse. If he didn't want it to be a quick recipe he could have left the ribs marinating in the broth he made overnight then baked them. Which I've tested and is amazing. Thing is. Not everyone has a BBQ or smoker, but nearly everyone has an oven, convection or full size.

Those ribs look awesome-you did great, Roel! Cheers 🍻
I see a Gordon Ramsey "Uncharted" Dutch episode a coming, would be great, we'd learn a lot about Dutch cooking heritage. Asian sauced ribs are a good change of pace but people be careful with salt from the added soy. I use hoisin, garlic black bean and a "little" bit of fish sauce, then sprinkled sesame seeds.

Anthony Bourdain once made a series called The Layover, and in one of those episodes, he did discovered Amsterdam and was on a hunt to find Dutch food traditions. He ended up in an Indonesian place, but also had the obligitary fried foods and snacks. I cannot find it on YT but it is a good starting point to get to know a bit more about how we eat around here.
You crack me up, man.🤣 Ribs looked great. I'd like to try a hybrid of your & Gordon's methods. Start with your method, then after smoking, slice individual and braise in sauce. Maybe then quickly finish on the grill for a few grill marks & set the sauce. The sauce looking amazing. 🤤
I made Gordon’s ribs like this like 15 times and they are amazing all the time 👌🏼 Really easy to make. Nothing to do with bbq but really good flavors 🥰

Can't agree any more. I have gone to restaurants and these ones taste so much more better and savory like any other.
You can also do brown sugar on top of the ribs after dry rub and then just drizzle a little vinegar of choice on top and it will make a nice sticky caramelized crust without the extra work. My dad just does that on the propane grill with some hickory wood chip packages to get some smoke in them. An every-man recipe
Great vid Roel, thanks! One question, does this recipe also works with iberico ribs? Flavor wise, Thanks! Greetz from Hengelo🍻

Brazing is cool because it cooks fast, I don’t like brazing and less it’s a heavy flavor like this so if you’re going with those heavy asian sticky strong flavors on it that would be good otherwise I would much rather smoke it. Praising is like boiling so you’re not gonna get a strong meat flavor like you would get with smoking but when you’re using all that candied Asian spiceSticky flavor, it looks great. I definitely like to try a couple. Lol I made a few of Gordon Ramsay‘s recipes, the simple Thanksgiving turkey recipe was really good and his scrambled egg recipe was really good. He put it in the pan cold with a lot of butter and just cook it on a really low heat and keep stirring it and eggs and it really fluffy and buttery. Lol I like the way you did it better, it takes longer but smokin the crust or big flavor profiles you can get a little Millard reaction in the pan but it’s not the same. I’m guessing yours were way better but they both looked pretty decent
Still amazed at how they still think that a majority of their viewer actually own a BBQ.

Oh man, now that's a smoked rib!
I learned this braising technique from Good Eats 20 something years ago. Good eats, but not as good as ribs cooked on the right kind of cooker.

I get that this is a smoking channel, but the thought process of "well it's not my way so it's inferior" is just dumb. This is like saying any fried chicken video is wrong because they didn't smoke it. It's completely different cooking methods. But yes, there is the added point that not everyone has a massive and expensive smoker to use, nor the priviledged time to use one.
@tidejets2056

@@anthonyfoye3769 "I get that this is a smoking channel..." Well, then common sense should tell you the overwhelming majority of people here will greatly perfer smoking meats. Therefore, a reasonable person can assume that most here will think smoking ribs is a superior method. If, however, it wasn't a channel geared toward smoking and he said that, only then it would be dumb. You must be a Gordon Ramsay fanboy. That's fine, but he means absolutely nothing to me as far as how I like to make ribs.

It would be far easier and probably better just to smoke your ribs then when they're completely done slice then and drop them in a large tray of almost fully reduced glaze and just reduce until sticky.
Je moet eigenlijk Rocksuger er in doen in plaats van honing veel lekkerder.
Great chef, great restaurant in Vegas. I still like my deeply smoked rids.
Ginger on ribs? That sounds like an odd Flavor mix, im curious to try it now.
I’ve made these so often in my Kamado with smoke even 10kg at once
It’s not weird. It’s braised. Reason why it gets tender in an hour is because it’s being cooked in a water based liquid. Water is a much more efficient conductor than air, so the transfer of heat into the meat occurs more rapidly.
If Gordon cooks it . It is good!
