Vermicelli Pilaf! Interesting Uzbek dish you have to try!

Pilaf/Pilau/Plov/Palov/Osh is very popular dish in Central Asia and some Middle Eastern Countries. There are different recipes, for most, have the same ingredients: onions, carrots, rice, meat, spices and oil.
This one is very different and instead of rice, we are going to be using Vermicelli.
VERMICELLI PILAF
You will need:
4 cups (650g) Vermicelli pasta or Thin Spaghetti pasta broken into 1 inch pieces. ( fast cooking Vermicelli pasta will not work for this recipe)
2 ponds Beef( any cut to your taste and budget) I used Tri-Tip.
5 cloves garlic (sliced)
2 large onions ( sliced half-moon)
½ cup Cottonseed Oil ( or any kind of high smoke point oils like: avocado, peanut, safflower)
1 tablespoon Tomato paste
2 large or 4 medium carrots ( slices julienne style, but thicker)
Spices:
1 tablespoon ground Coriander
1 teaspoon Turmeric
1 teaspoon Aleppo pepper
1-2 tablespoons Kosher salt
1 teaspoon Black pepper
1 tablespoon Cumin seeds
Fresh Dill or Fresh Cilantro for serving.
