Someone has kindly pointed out I messed up the risotto recipe by adding the rice bit by bit as well as the stock! This is what happens when you're overworked haha (guess it shows we all make mistakes!) Please follow the recipe instructions on my website rather than the video!
I was always scared to look into vegan food channels because a lot of them use weird powders, supplements and products I’ve never heard before, I’m so glad I found your videos where everything is affordable and easily accessible :)

Exactly! Her and PUL channel actually made me consider going vegan and trying out vegan recipes 😊 The way they spread vegan message is so positive and honestly that's why I did it in the end. They are so real, positive and full of information!

I agree! I’m vegan and was like wtf is this while watching some people. They had a million powers and flours & it was just unrealistic. Needless to say I unsubbed and found people that use real food!! :)

Not just for students! I’m 28 years old and have been out of school for ages, but I work at a non-profit animal shelter making a very low salary. Budget meals are the best!

I'm allergic to coconut but I love creamy curries, I use a plain yogurt like soy or almond based. If you can find a Greek style it's thicker and will give you a thicker curry like coconut milk does. If not I just add a cornstarch slurry to help thicken slightly.

@@tisharodriguez9541 you're most welcome. The only other people that I know who are allergic to coconut is my two sisters. I've never heard of anyone else.
I also really love to swap part of the water for the risotto with plant milk. Adding some nut butter and/or nutritional yeast is another favourite. I enjoy eating it with peas, but cauliflower, broccoli, silver onions and mushrooms are great, too! Greetings from Germany, Anja

Just made the leek and potato soup - AMAZING!! I added corn, a tiny bit of lentils I needed to use, some chard and a splash of almond milk then only blended half of it. Served with some homemade bread - Literally so easy and SO GOOD
My husband and I have been slowly but surely going towards the whole food route. We are in our upper 50's and change can be challenging at this age... (especially for my husband😳) LOL. I have also been practically bedridden for the past five years with several serious autoimmune diseases and I can attest to the fact that the cleaner I eat, the BETTER I FEEL!!!! ( I must avoid soy, so I do eat a little meat.. but not much).

Here a tip: use the knife the other way around so the sharp side is above to get the cuttet ingredients of the cutting board. This makes the knife stays sharp even longer. Sorry for my grammatical mistakes I am German 🙃. Love

@@multifandommochi6547 they mean use the dull side of the knife to scrape ingredients into pans and bowls. That way the cutting edge doesn't get dulled.

All these recipes look absolutely lush .... Thank you. Since we are talking budget though as far as the leek and potato soup is concerned .... chop the veggies smaller and they will cook quicker and save fuel. And to save even more fuel bring veggies to the boil .... boil for a few minutes then pop a lid on top ... turn off the heat and let them continue to cook from the heat in the pan ... it might take a little longer to cook but you can save loads of fuel this way . Just give it a quick blast of heat before serving if your concerned it may have lost the ideal temperature.
Don’t like coconut/too expensive? Add a good dollop of tahini instead to give it a creamy texture and a slight nutty flavour.

@@AmiAmarantaml In Serbia coconut milk is 3€. I often don't struggle with money, but it's too expensive anyway, so when I need it for some recipe I just make my own. It's a 5 minute job.

This channel has been a god send. I have recently decided to go vegetarian as it’s easier to transition into other then veganism when I adapt it’s definitely something I’ll consider for myself my biggest concern was budgeting and this channel has been amazing I calculated and I’d send $4-$6 just for myself in a week on dinner and still be able to make extra for lunch the next day since the rest of my house are meat eaters [family] I wish there were more channels like this

Well, didn't wait any longer finally. Can you believe I had never made some curry before ?! I pinned and registered so many recipes but never went for one, until your last video on YT. It seemed simple and yummy and it was. I just swapped the eggplants with zucchinis because I had some in the fridge and added some lacto-fermented tofu leftovers and it made a delicious lunch with some whole rice I had already cooked from the weekend. Next time, I'll try with the roasted eggplants but it's definitely a keeper, thanks Madeleine!

My extent of cooking knowledge is boiling pasta, (and I’ve only done it once, actually to make hummus pasta!) but these recipes you post seem so simple I feel like I could definitely do it. So today is the day I cooked the fourth one (the risotto) and all of them turned out great! I love your easy recipes, the budget ones escpecially. Not necessarily because I’m on a budget but because the ingredients are easy to get. I sometimes have trouble getting the ingredients for foreign recipes. Tip for the leek and potato soup: cut the leek in half lengthways, then chop up. Put it into a bowl and fill with cold water. Swish it around and then drain. This gets rid of any dirt/sand in the leek:)

I've just finished baking the pancakes and they're as delicious as they look! Didn't have a frosen berries mix, but pomgranade seeds and blueberries work just fine :)

First thing I thought as well!
I give you a piece of advice in case you want to try new things while cooking :) We, Italians, are used to make the soffritto (it means when you put Che onion and the garlic on a bit of hot olive oil) and put the tomato source when the onion is yellow. Then, let it on fire for 15 minutes and then, put the other things. The sauce will be creamier and tastier :)
