Hi guys! So there is a mistake in the video for the cashew cheese - I say on screen to add 1 cup of water to the food processor, and the bring 1 cup of water to the boil. It is meant to be 1/2 cup of water to the food processor, and 1/2 cup of water to the boil. So sorry about this, but the recipe on my website is correct: bit.ly/2IIPlbP

The cashew cheese is delightful! I almost cried because I so missed cheese. I am allergic to dairy big time! I did not have the agar agar powder so used 1/3 cup of the agar agar strips that I soaked in 1 cup of water for 15 minutes. I then boiled the agar and water together to let it dissolve. I then placed half the agar and water mixture into the food processor with the other ingredients you mentioned to process. After that blended well I added the blender mix to my now 1/2 c boiled agar agar did the rest of what you shared. It was a bit more of a pain but it worked! So grateful! Thank you!

I tried the almond cheese recipe, but reduced the lemon juice to 1/2 tsp, removed the sugar, and used only 1/2 tsp sea salt. Call me weird, but the blended almond and nutritional yeast yielded a flavor and consistency very similar to tuna salad in my opinion. So much so that I went ahead and slathered some between 2 pumpernickel slices, added tomatoes and lettuce and made myself a sandwich. For me, it was a legit vegan tuna salad sandwich. To make it more filling, I want to try mixing in some jackfruit or maybe artichokes next time. Thanks for the recipe! Love the look and feel of your video :)

I tried a vegan pistachio slice in my local cafe. There were two layers: one green (pistachio presumably) and one brown. The brown layer had a slight bitterness but despite this tastes nice and had a nice texture in the mouth. The green layer was so sickly sweet I could not eat it; on examination I found it was just a green paste. This leads me to believe that vegans use more fats and sugars in their products to acquire a taste which would otherwise be lacking.

I did the nutrition facts for the first 2 cheeses, each broken down into 4 servings: 1) Almond Cheese: 186 Calories, 6.775 Grams or protein per serving. 2) Cashew Cheese: 153 Calories, 5.95 Grams of protein per serving. I would've done the third but I don't know wtf plant milk is. Wasn't sure if it wasn't almond or coconut or oat or soy or whatever.
