I want to thank you for all your recipes. My daughter has been a vegetarian since she was 11. Couple months ago she decided to go completely vegan. I was clueless on what to make. Your channel was the first one I found. Now I make homemade seitan, tofu, soy milk, oat milk. She loves mac and cheese so I'm going to try this one for her today. Your channel is still my favorite vegan channel!

As a kid who was a vegetarian, can I just say thank you? I know catering to my 'cows are friends, not food' morals added an extra step in a lot of my mom's meals, because there was no way my brother was going to give up meat. And now you're keeping up with a vegan diet and making all these homemade things? Super Mom alert! PS: I also love, love, LOVE mac and cheese. Well....'cheese'.

This is almost identical to the recipe I use. I do not add any non-dairy milk though, I use the water leftover from cooking the potatoes, carrots, and cashews (which is seasoned, with salt, pepper, minced garlic). I do not add lemon juice or ACV either. It's great for a queso dip too, with red pepper flakes, a little bit of smoked paprika. I also like to use it as a base for vegan broccoli cheese soup!❤

Add a sweet onion as well to the water for more flavor. I did burn out my black and decker blender (cheap) because I didn't have enough liquid. So just be careful
If you're allergic to nuts you can use sunflower seed or sun butter. It's really good in vegan cheese spreads

A dab of miso paste also adds the umami and saltiness. I think this would also freeze well for make ahead meals.

My recipe is similar but different, dear Rose. Cheeze Sauce 1 cup diced potato 1/4 cup diced red onion 1/4 diced carrot 1/2 cup raw cashews Boil 10 minutes in 1 1/2 cups water *do not drain* High speed blend with 1 tbsp lemon juice 1 tsp salt 1/2 tsp garlic powder 1/2 tsp smoked paprika 6 tbsp nutritional yeast That’s the BASIC recipe but it only gets better from here. Toss in chilies in adobo or hot sauce. Feel free to back off the salt if you’re adding a bunch of hot sauce. It’s great for nachos, mac and cheeze, smothered on roasted veggies, dip for French fries, etc.

Understandable, tastes are so personal. Maybe it can be a starting point for your own customization. I use Anthony brand nutritional yeast and haven’t cared for other brands. I imagine that would be a contributing factor too.

Is that 1/4 c carrot, or 1/4 of a carrot, and if 1/4c, is that shredded or sliced (just curious bc how it's cut would affect the measurement.)
Oooh I just made a large batch of this, and have a few jars in the freezer. I put this shit in everything! Edit: if your don't have cashews you don't need them, and a roasted onion and garlic cloves add an extra yummy boost!

For the people not wanting to use cashews. This is similar to the one I make for my nonvegan in laws on holidays but instead of cashews I use a little tahini and lactic acid. If you don't have lactic acid just use a plant based yogurt. It provides the same flavor.
I'll likely steam the veggies (smaller amount of water, which I freeze for soup later) and time permitting, I plan to soak the cashews overnight. Ingredient list: 2 sm or 1 med potato, peeled 1 med carrot, peeled 1/4 c cashews 1 liter water (for boiling) 1/4 c nutritional yeast 1/4 c non-dairy milk 1 T lemon juice 1/2 t apple cider vinegar 1 t garlic powder 1 t Dijon mustard

i’m lactose intolerant and i’m trying to find ways to enjoy mac and cheese without dealing with the consequences of eating dairy, so this is very helpful! i don’t have a blender but this shall be a perfect reason to buy one lol thanks for sharing this recipe!
I just made this yesterday and it’s so delicious. It’s better the next day. I’ve been using it as a dip with Tostitos. I had to add some more lemon juice, vinegar, and salt. I also added in an onion with the potatoes, carrots, and cashews and a then when I blended, added a tablespoon of cornstarch. It’s so smooth and creamy. Super delicious. Definitely going to be my go-to.
After watching this, I threw a sauce together wihtout even measuring, just kind of going by sight from watching the video, and it came out amazing!! This is my first time ever trying to make a vegan cheese type sauce! I just kept tweaking it with this or that til it was to my taste. I wish I'd realized how easy this was ages ago! Hi. Thanks so much for this recipe. Just made a double batch. I love it! In keeping with "lazy" I didn't peel the potato or the carrots. Still wonderful and a bit rustic looking. I like the comment about miso. Might try that as well as a pinch of cayenne when I want it hot.

Not a vegan but was looking for a vegan mac/cheese recipe and this is the one I will choose, modified. I already eat nutritional yeast on many things as I really like it, so it will go good with this. BUT, I would opt to use butternut squash as opposed to carrots, some (onions/garlic/mushrooms) salt/pepper, leaving the other ingred., intact. Make it a little thinner and bake it like an original mac/cheese. Also I only use whole wheat. Attempt to keep carbs:fiber, 5:1 or less.

I love that sauce, i make it every once in a while. I put pickled jalapeños, chipotle chili powder and a grilled paprika from a jar in it and make it a nacho cheese sauce like the one you get in the cinema ✌🏻

Hi did it work canned? I assume pressure canned but how long did you keep at pressure?
This one is more liquid than the one my friends and I made but we didn't have a carotte or cashew in there! And mixed the potatoes on the side which gave the whole crazy sticky texture already and I think added starch if it was loose (it was for a pizza) but oh my god, yum

Tip for those of you who don't like the taste of carrots, I always use pumpkin for the orange color. In Holland we have a traditional dish called "hutspot", which is mashed potatoes with carrots and onions. This dish is not my favorite, so I don't like the taste of a cheese sauce made with carrots. ;-)
Think I'd use sweet potato and add some smoked paprika, use it as mac and cheese sauce and have it topped with mushroom bacon and a little bbq sauce 😋

You can boil the cashews for about 15 minutes to soften them up quite a bit. I know a Vitamix or equivalent is expensive but once you bite the bullet and get one it makes nut milk and vegan cheese production almost effortless. Highly recommended fwiw.

The texture if this was on point just like thick cheese sauce. The flavor was not cheesy though. I left out the mustard and vinegar. I'll try exact recipe next time. Texture is most important. I'll fix the flavor.

I have a question. I used a recipe very similar to this. I thought i did everything correctly, but it came out extremely nutty. Like a stroooong cashew taste and I had to bin it all :(. I know it obviously has cashews in it, but I wasn't expecting it to have that strong of a taste. What did I do wrong? What can I do differently or is this supposed to taste like that? Sorry for mediocre english lollollol Edit: the other recipe had far more cashews so maybe the ratio was off!

It sounds like your ratios were off. Try using less cashews next time and more veg, and a bit more nutritional yeast. Your English is great! I guarantee I don't know your home language. :) I hope your next batch is amazing!
