Huge pasta hack especially for vegans - protein pasta!! Get pasta made with lentils or other beans so that you get a serving of protein.

Totally agree! I use a company called Zenb made fro 100% yellow peas. High in fibre and protein.

Absolutely. I'm vegan but I'm also heavily into powerlifting and bodybuilding. A high protein pasta makes all the difference!! I used to worry when I was a meat eater that I'd never get enough protein a day if I stopped, I now hit around 130g protein a day without any animal products. Best one for me is red lentil pasta, add in some tomato and basil sauce, lots of veggies, scrambled tofu and some roasted chickpeas for texture and bite and I'm in heaven.

@@sloeginandsleep1170 chickpeas are the nectar of the gods to me lol. The most versatile of the legumes in my opinion. I'm not vegan but I'm environmentally and ethically conscious so I'm working towards vegetarian and especially with the grocery costs today I'm more focused on plant based proteins than ever. I can't eat any of the beyond or impossible products unfortunately, but I tolerate and actually LOVE tofu.
I'm not a student, but have been struggling with my mental health and helping to support others in my life. During these times, I never want to cook, so comforting but simple meals and ingredients are what I need. I made the jambalaya at the weekend and the Mexican lasagne tonight - both delicious and easy and will be added into my meal rotations. Thank you Madeleine ❤

Top tip: when you cook pasta put a vegetable stock cube in the water with it. It tastes amazing and once you’ve done it you won’t do it without it I promise. It adds such an amazing flavour to the pasta dish
Wow, I’m actually here first for once! I also love your recipes, and my rotation was getting a bit stale! Student, Schmudent - I’ll be trying these and I’m 42!

I’ll be trying these and I’m 56! 😁
Aw thank you for being so accommodating. A lot of cooking channels use a bunch of different tools and sometimes it discourages me to even try them, since I don't have all this fancy equipment. You are being really kind and down to earth 🥰
You could call it a tortilla bake to keep the haters at bay 😂 These all look delicious! I have some left over tortillas I need to use up and this will be a perfect way to use them!
I make a similar casserole. I soak the tortillas in enchilada sauce then layer those a mixture of cooked quinoa (made with broth)+ a small can of sliced black olives + 1 small raw diced onion + 1 can rinsed black beans + chili powder + garlic powder salt and pepper + diced deseeded jalapeño+ cheese then repeat ending with sauced tortillas. Bakes 40-1 hr at 350F / 160 fan
I love adding frozen peas to my Jambalaya for a burst of brightness in the dish 😊
Love that blue dress in your dreamy white kitchen. Also love your commentary throughout giving options for substitutions...shows your experience and knowledge!
Haha about the "that's not a sausage" thing. My uncle has been a meat salesman and I have to argue with him at every family BBQ. My comeback is "Well, the word doesn't have anything to do with it's contents, it is the freaking form of serving the thing - the form, dough -.-" Don't know why he is insisting every time when he's actually the professional. My dad on the other hand loves my meatless options because they don't need to be cooked specifically, just be a litte brown on each side :D
You look so happy and glowy and healthy and wonderful. Truly a vegan inspiration❤️

Thanks so much this is so sweet
Thanks for the great recipe ideas! Love the simple affordable meals❤️
Hey- this was wonderful!!! I live in the US and have a family of seven. I am always looking for easy quick meals. These all look delicious and the would totally be gone. I have a 13 year down to a 2 year old. I am so excited to try these.
Wow, these Simple Vegan Student Meals are a lifesaver! Being a student myself, I'm always on the lookout for budget-friendly and beginner-friendly recipes. Your video gave me so many ideas and I can't wait to try them out. Thanks for making vegan cooking so accessible and delicious!
Yum! The last dish is so similar to something my mom made all the time when I was growing up. I would recommend adding a bit of cocoa to the sauce (look up recipes for mole for inspo), and using corn tortillas instead of wheat ones.
Love the kitchen, the production, the recipe and the dog. All together amazing video!
The word “meat” literally means “solid food” hence why back in earlier days desserts were called “sweet meats”. People who think “meat” has to be a dead animal whether in a sausage or a burger or whatever are just ignorant of the meaning of the word. Not only were there those Welsh sausages but in Asia Buddhist monks have made Seitan as a staple high protein nutritious part of their diet for a documented over 1000 years.
I too came across Jambalaya during my bachelors at Uni and fell in love! I make it all the time! Also, top tip for those feeling they want variety on a budget but can't afford to buy more types of veggies (either due to money or storage) I 'tricked' myself into thinking I had more variety by chopping my veg different ways within the same meal - ie. half of a pepper in strips, the other half in chunks ☺️
Those look so good! Thank you for the inspiration. I have a busy week next week (lots of Uni deadlines) - so I will definitely try those recipes 💜🌿
Honestly loving all these new food/recipe videos!! Brings back all the memories of your older videos and I love it. Thank you for coming up with yet more creative, delicious meals for us Maddie
I first learned to cook from watching your student recipe vids! Now that I’m living on my own your recipes have become my staples :) appreciate the new video!!
Beautifully shot video! The recipes look amazing too. Roasted pepper pasta looks very tasty
The lasagna looks amazing! I’m wondering how are you coming up with this innovative idea - genius! Looking forward to seeing more videos from you Madeleine❤️
Love all the recipes, so relaxing to watch, can't wait to make them. Perfect for my daughters college and work meals prepping 😍 awwww love Roxy at the end, she is so sweet x 😍
My husband makes an incredible tortilla lasagna which he based on an Alaskan recipe that originally included halibut. It’s very similar to yours with a twist, but I love the idea of putting corn in 😍
Really lovely to have food again. and I love the student (cheap) meal ideas, Im saving for holidays again
My little boy(5) loved the pasta so much & has been asking me to make it again💕💕
Lovely to see some easy, affordable meals.
Thank you for these, going to give them a go (not a student but recently retired and learning to cook)
That jambalaya looks delicious! Thank you for these recipes!
omg NEEDED this!!!!! 🤍🤍
all looks amazing! can't wait to try these
Just a tip, if you are adding ketchup to dishes I would recommend adding it while you are roasting the veg before you add liquid so that the ketchup has a chance to caramelize, it adds so much depth of flavour 😉
Those were just perfect meals! I love all those ingredients. Thanks for sharing.
I love these videos. I'm not someone who enjoys cooking and these are so easy to make.
Yay! Love these budget cooking videos. ☺️
That was amazing thank you Madeleine 🌱💚
Love the mini history lesson on sausages. Had no idea 🤯. Thanks for sharing!
Fantastic recipes I definitely will be trying these this week. Thank you so much xxxx
I missed you! I seem to be addicted! You make me feel so calm! Hope you’re feeling better now after Covid! 😘😘
Those dishes look so tasty ~ defo going to try them! Using the light colour cookware is really clever as it shows every ingredient that you put in.
Oh Maddie! How I’ve missed your cooking videos! I can’t wait to try these! That RPP looked DELICIOUS! Blessings & Hugs! 🧡🌻
Love these recipes!! Can't wait to try them!!!
Love Roasted Bell Pepper. Will try that Pasta dish. They all look really good and yummy. Love how simple.
I love them all! I’m Mexican and I love the idea of the Mexican lasagna inspired dish! I will try to recreate all of them!!! 💖 God bless you

Mexican American here, and I think your inspired dish looks wonderful. Can't understand why people get bent out of shape over food descriptions. I've read it, but it seems like a waste of time. Have you ever done a video on starting up a basic vegan kitchen? A basic beginner's pantry staples, perishables, small appliances, sort of thing? I've seen the everyday shops, but was inquiring more after a setting up a vegan kitchen.
Us in the states, or maybe just California, would call the last dish an enchilada casserole of sorts. If you added some cumin to it it would add an extra something something😂😋 it looks really yummy as it is tho
These actually look so good, I'm the worst cook but definitely feel like I have to give some of these a go!

Revisiting this 5 months later for the pasta sauce recipe because I got a fancy new blender lol
Wow made your vegan jambalaya today and used whatever veggies I had at hand it was divine just the right amount of spice
You can buy Red Wine/White wine stock cubes in Tescos and Morrisons for £1 (think you get about 6) Adding one of these cubes to Jambalaya takes it to the next level
Love all the recipes. Thankyou!
I love these budget friendly meals
Going to make the Jambalaya tonight! Yummy 😋 All three look delicious.
I missed this kind of videos so much, I was running out of ideas. Thank you 💗
I've made a similar mexican-inspired lasagna since my college days, but with corn tortillas and my favorite salsa. And sometimes I've cooked salsa together with some cumin, thinly sliced carrots, and cauliflower cut up small, which adds a nice variety of veg to it. I have also made a kind of casserole with refried beans on the bottom, salsa and stir fried veg (carrots, cauliflower, bell peppers, corn) on the next layer, then covered with cornbread batter on top and baked until the cornbread is done. I use masa harina and all purpose flour to make the cornbread batter. It's got a bit of a Tex-Mex vibe and super easy.
Love these recipes esp liked the lasagna with wraps bit different looked tastey thank you x
I have an similar receipe for a mexican inspired lasagne. It's very delicious! Hope you do more receipe videos in the next time
I love the red pepper pasta! So creamy and you can also add some fresh red pepper to the pan with the onions. Perfekt if you have one laying aroung thats looking a bit sad because it gets blended anyway :)
Omg so cool, i'm gonna do the first recipe tonight !
I love these types of videos
Loved the video as always! Definitely looking forward to trying out the jambalaya recipe! Minor tip, if your cutting board is sliding while you use it, try putting a damp kitchen towel underneath it. It should help keep it in place! Great job!! ❤️
I have a bunch of red peppers laying in the fridge that was cheap at the supermarket and a can of coconut milk for another recipe that I won't use up completely. So the first recipe is perfect right now. I'm definitely going to try it
Jambalaya and Mexican casserole both look amazing! Will be trying both. :)
i’ve been watching your videos for so long, now i’m actually in uni haha
Simply love your cooking videos Maddie!!!! \o/
looks nice!!! I'll try this
With the cost of living, student or not, this food looks so good!
Thank you for your recipes. I learned something new.
I’m not vegan, but watching your videos I’m slowly converting into one
Jambalaya looks amazing!
How did I never think about mexican lasagna??? It sounds soooooo gooood!! I'm gonna try it today!
All yummy. I live in Los Angeles and Mexican Lasagna here is with lasagna noodles. When it's with tortillas, it's a casserole. I make it in my tiny slow cooker that's the width of small tortillas - I just layer until 2/3 full.... Now, I want a Mexican casserole - too late for tonight's dinner! To be truly uni student friendly, you should share microwave low-budget meals.
Hi Madeline love the video! would you be able to make a family friendly meals video? Recipes that kids would enjoy but are also healthy? 🙂
If the negative comments wear you down have someone else read your comments and delete the negative ones so you only see the positive ones...I know a few utubers that do this...personally I love your videos!
I love these recipes the Mexican lasagna reminds me of Nigellas so tasty thank you!!
Maddie you're a legend!!
Girl you look like freaking barefoot contessa in there with your fancy new kitchen, filming looks so professional, but all of these meals looked totally achievable to me!! Love!!
Thanks for sharing these yummy 😋 budget recipes which are welcome during the increasing cost of living crisis that is happening global. I try to be optimistic and hopefully things will improve because I don't want to be negative because there's enough of that. I can't understand the fuss non vegan consumers make about sausages and other vegan alternatives. Love 🥰 the video and love 💞 Madeleine.
Hi Maddie they all look yummy and easy to make. I'm Italian but I think this is a great twist on lasagna.👍👍❤
That Mexican lasagna recipe with the tortillas is so cool! All of these recipes are tomato/pepper based, I’d love it if you could do some without tomatoes/peppers/aubergines! I’m intolerant to them and sometimes it’s hard to find inspiration with so many recipes relying heavily on them
Sweet Potato Soul makes a great jambalaya. She’s southern and vegan. You should check that out.
Inspired to make a lentil lazagna tonight!
❤ amazing lasagna! I'm Italian and vegan like you and I love all your recipes!
Oh Madeleine, that turquoise dress🥰looks so pretty on you. That foodlooks so yummy😊
I think my kids will love that red pepper pasta 🙂
Its so great! Thank you :-) maybe you could do a series on that? I constantly struggle with low budget vegan meals :((
I just tried your asparagus risotto you showed in a recent video (I added mushrooms) and it was SO GOOD! Would be cheap too
Fabulous 👏👏👏👏
You’re like a vegan Nigella. Love it thanks!
could the red pepper pasta work with silken tofu for more protein?
I would add nutritional yeast yes!!
Also can use regular peppers just sate … then blend
Really cool video!
Madeleine you look so pretty in that blue blouse and the video is fantastic. Thanks to Alex on the sausage history too. Can you name the brand of sausage again, not sure what is comparable in the USA. Love all the recipes and will def try them even at over 70 they appeal to all ages on a budget. What vegan cheese melts well too. My 10 yr old grandson is gluten, soy, dairy intolerant . Not sure how to use nutritional yeast in recipes. Love Roxy! My 4.5 yr old schnauzer Lilly Rose backs at the tv on site of dogs to say hello. Have a lovely weekend.
Would add some bay leaf or bay seasoning to your jambalaya for a more realistic flavour :)
Im interested in why you use white pasta instead of brown. I do like the nursery flavour of white foods so i get it!
Where are your roasting dishes from? 😍
This video is perfect 😄 I am moving out soon 🙈
Where did you get that lovely turquoise dress from?
Please , please release your own cookbook!!! I would love to see more of your recipes.
