This Smash Burger Changed The Way I Feel About Making Burgers
The great American smash burger is a true wonder of our nation. Pressing the beef onto a very hot flat piece of metal gives you a browning effect you just wouldn't get from simply making a patty and cooking it in a pan. Just make sure you're using beef with at least 20% fat content and it will work out extremely well for you.
Special sauce
3/4 cup mayo
1 1/2 tbsp yellow mustard
1 1/2 tbsp ketchup
2 tbsp chopped dill pickle
2 tsp onion powder
1 tsp garlic powder
1/2 tsp red wine vinegar
s=p to taste

I believe smash burgers were born from a convenience standpoint because why pay someone to form patties when you can smash the balls right onto the flat top 🤣 the crust you get is a way better than just dropping it into a pan just make sure you have a high fat content ground beef and it will be amazing 🤩

College student/subscriber here who just now stumbled upon this episode (must've missed it) - the last few weeks I've been on a smashburger craze just trying different ways at home to make fantastic burgers for my fraternity brothers and I while keeping things at an affordable rate for the average student. The fat ratio is absolutely key. I thought higher fat content wasn't always the play, but this came from my fitness days (LEAN IS LAW). My local butcher actually had a sale on ground wagyu, and without a doubt those were some of the BEST burgers I've ever had (let alone made myself??). Stoked to see my little trial and errors actually yielded some results consistent with what a recipe would be!
True story: the first time I made a smash burger for my Mom, she took a bite and looked at me like I was a magician. I'll never forget how huge her eyes got 😂

I’ve never liked thick burgers and am not fond of burgers cooked on a grill. Decades ago I would smash the ground beef very thin, in a cast iron skillet or griddle. I loved the crispies on the burgers! Who knew it would become a thing? It’s also why I love Steak and Shake as it’s how they make theirs! I can’t wait to try your sauce!!!

Sonny...to amp the special sauce (or anything mayo based), try using Kewpie or Dukes mayo. Yup, it makes a BIG difference over typical grocery store fare.
