2 quarts ice (to cool down brine instantly once boiled)
1/2 bunch Italian parsley
1/2 bunch chives

I LITERALLY JUST MADE THIS like 2 mins ago. This brine is soooo good. Followed the video exactly but I only brined for 4 hours and it was still flavorful!! Can't wait to try it after 8 hours of brining. Thanks and I hope "YOUKNOWILOVEYOUANDIMOUT"

That would probably make the best chicken sandwich ever! On a brioche bun, with fixins. Or even sliced over a Caesar salad. Amazing!
Sonny, another good tip for when your measuring thick syrups/honey for a recipe is to spray the measuring spoon or cup with a cooking spray(PAM, etc.) before putting the syrup/honey in it.
I have been using Thomas Keller’s brine and fried chicken recipes for over a decade. I have served this chicken for at least 200 people and it is always regarded as the best chicken anyone has ever tried. This is not a a pat on my own back, I only follow the directions. All praises to Thomas Keller.

Thank you for this recipe! Can’t wait to try it! FYI, in a Japanese tonkatsu recipe video, the chef used a toothpick to flip the meat in an egg wash. I tried it, and surprisingly. it was a lot easier than a hand. At least for me.

3:15 when I am done brining the chicken, I like to use the leftover brine to make a lemonade style drink. You do need to add more sugar but it has all the nice flavors of the herbs and just a hint of chicken. Very delicious on a warm summer day and all that salt really helps re-hydrate me.

Relevant cooking hack: for easy measuring of honey, use a dab of neutral cooking oil and coat the inside of your measuring cup. The honey won't stick.

This recipe looks absolutely amazing
How does this compare to your garlic and herb chicken breast? I've made that twice so far because I've long felt that chicken breast is a challenge to do right, and I want to climb this hill. The first time was pretty good but the second time was excellent. The tenderness was 100% on-point this last time, but the herbs didn't come through enough for me to call it great. Third time will be the charm! So yeah, how do they compare? On the scales of juiciness and flavor.

I feel brined is better for breaded chicken etc... and for a pan fried chicken breast I would prefer un brined. hope that makes sense!

I've watched a whole lot of recipes on KZread. I'm very picky about which ones make my FOOD playlist and even more picky about the channels I subscribe to for recipes. You, sir, deliver every single time. When one of your videos pops up in my feed I always watch it and am never disappointed. In my opinion, you aren't a cook or a chef. You just reminded me,I haven't had fried chicken in awhile... I do mine the same way (about)...😁😁😁 bringing was a "thing" only restaurant cooks knew about. Home cooks never seemed to use it. I was fortunate to be from a longline of cooks. Because of this I used brine all the time. It is a great way to get favors into meats. I know,you already know that!!!! You know I love ya!
