Another good thing to do would be to put a layer of unpeeled fingerling potatoes between the bacon and the onions. The potatoes would then receive flavor from the bacon, onions , garlic and the bone marrow.

Use a piece of toasted bread to go with that, it is amazing. Also, we usually eat this in tortillas as tacos in Mexico. One of the best salsas you will ever have is a regular Molcajete roasted Tomato, Onion, Garlic and Serranos with the bone marrow in it, it is amazing to go with rib-eyes or amy other beef cut.

I love this, it is a fantastic dish. We like to have it with pap or bread. What you can do (should do ;) ) is take out the raw marrow, butterfly a fillet (I like venison; Eland or Gemsbok) put it in the middle of the fillet with your herbs and spices and then Kamado it.

🤤🤤🤤 in Mexico they have restaurants or taco places that make amazing tacos with mero and you can order a split bone with the marrow cooked on it. This put the bones long ways so you get about a 6 inch long split bone with the marrow and it’s spiced and marinated and roasted. It’s pretty amazing whether you get it on a taco or just the marrow alone. The other cool thing about bone marrow is that if you get it from a good healthy grass fed cow, it’s about the most nutritious food on the planet. Super food is just sort of a term people for around but if there was anything that deserved super food designation it would be grass fed beef bone marrow.

So in my family we would be butchering cows and lambs as well as our wild thing. We always took the phones cut them up like you all did. We boil them until we had a broth to save up for when we're doing our cooking or when sick. We would also take the bone marrow out and can that. We'd use it as a bone marrow spread like butter when we're eating our bread. Is very high and nutrients of all kinds. The native peoples would take the bones and put them in the fire to cook them that way. Crack the bones open after about 20 minutes in the fire and eat the bone marrow that way.
