The Best FILET MIGNON I ever made, WOW!

Ойын-сауық

Butter, steak and bone marrow, what can be better than that? Today I show you what might be the absolute best steak recipe I've made this year. This butter of the Gods made this wonderful filet mignon melt in my mouth. We also tried cured egg yolks that made the steaks fit for royalty. As a side dish I decided to compliment this wonderful steaks with some nice garlic fries that were very easy to make. Give this one a try guys, go out grilling and you will love it!

    I commented this on his last video for this butter, but it never got traction so I’ll add it here. After you brine the marrow to get the blood out, you must either freeze it immediately or roast it within 24 hours. When I tried making this butter I kept them in a sealed bag in the fridge before I had the chance to use it. When I opened the bag they smelled of fish (indicating rot) and the marrow was turning gray

    @digitalgods55683 жыл бұрын

    This might help Butter of the GODS Recipe **Note: This is technically a compound butter. Some people call the roasted marrow 'god butter', but we want to add other ingredients. 4 Tbsp Roasted Bone Marrow 8 Tbsp Butter 1 Cured Egg Yolk shaved 1 tsp Parsley 2 tsp Shallots 1 tsp Anchovy Paste 1 Pinch of Salt *Bone Marrow 2 long marrow bones cut lengthwise in half To remove blood, heavily salt some water in a pan long enough to hold bones. Place bones in water, cover and place in fridge for 1 day or more When marrow is white - good to go. Salt Water should absorb blood, marrow should be white Place bones in broiler on high for 10 minutes, marrow should be cooked. Remove marrow and set aside. *Cured Egg yolks Crack eggs and place in bowl Using a 3 to one ratio (Qty depends on how many egg yolks are being cured) Add 3 parts kosher salt and 1 part sugar Place part of mixture on plate or pan - make a slight divot in salt mixture for each yolk Scoop out an egg yolk from bowl, leaving the white behind Place yolk on salt mixture and repeat leaving space between yolks. Cover yolks with remaining salt mixture Place in refrigerator for 5-7 days (5 is probably ok) Using spoon, carefully remove each yolk and bath/rinse each yolk in water to remove salt mixture Place on parchment paper on a pan or rack for oven Put in oven on lowest temp for 2 hours Yolks are now fully cured Yolks can be shaved using fine cheese grater Can be frozen for future use. *** Final product Warm butter to room temperature Using a micro grater, shave an egg yolk completely Mix marrow, butter, shallots, shaved egg yolk, Parsley, anchovy paste, salt in a food processor, or you can use a wand mixer Place mixture on center of 'clinch' plastic wrap. Cover mixture completely in wrap and spin around to form cylinder Place in fridge for 2 hours or longer. Butter is ready to be sliced
