This cake is so delicious that I bake it every weekend! Creamy and juicy!
Simple cake with mascarpone, airy almond sponge cake and berries! You have to eat such a tender cake! The cake is so tender, it melts in your mouth. It is the best recipe with berries. Strawberries, blueberries, cherries....! Anyone can make this delicious berry cake recipe! Everyone will be amazed at this simple and beautiful dessert. A very tasty recipe. Cake in 15 minutes. Very tasty, a cake for every day!
Ingredients/Recipe: (1 cup = 250 ml)
Dough:
5 eggs
A pinch of salt
120 g sugar (3/5 cup)
130 g flour (1 cup)
30 g cornstarch (3 tablespoons)
1 teaspoon baking powder
100 g ground almonds (1 cup)
Baking pan: 18 x 28 cm (7 x 10.5 inches)
Bake at 170 °C (338 °F) top and bottom heat for 25 minutes.
Set the crumbs aside.
Divide the cake in the middle.
Berry layer:
400g berries (frozen or fresh) 2 cups
40 g sugar (1/5 cup)
150 ml water (3/5 cup)
3 tablespoons cornstarch
Cream:
500 g mascarpone (2 cups)
330 ml whipping cream (about 34% fat) 1 1/3 cup
50 g powdered sugar (2/5 cup)
1 teaspoon ground vanilla bean
Put 4 tablespoons of the cream aside. For the decoration at the end.
Berry icing:
350g berries (frozen or fresh) 1 1/2 cups
40 g sugar (1/5 cup)
150 ml cold water (3/5 cup)
1 pack of cake jelly (cake icing) 22 g (not 11 g as mistakenly written in the video)
Chill for 2 - 3 hours
Finish decorating the cake.
