Sponge cake. Velvety smooth custard. Golden toffee. Those triple layers bring home three times the flavour, if you ask me! Creme caramel meets the fluffiest sponge in what might just be one of my favourite ever desserts. This Vietnamese flan cake (also known as banh flan bong lan) is sweet and creamy, light and airy, plus that just-set toffee is taken juuuuust to the edge for a rich finish. A perfect pudding in my opinion - I’d love to know what you think!

There are many recipes of this in the Philippines too, pretty local, and got it from Spanish tradition of the Leche Flan. This milky egg custard Leche Plan is set on top of a chiffon cake mixture and can do on any mold, tiny, bigger in any shape or form. Local bakeries across the archipelago have this common , locally called Custard Cake. But there are bakeries that make thick Milky Egg Custard / Leche Flan on top a sponge cake or any cake mixture of choice. This is delicious.

I had flan as a kid growing up in Colombia and it’s a nostalgic flavor that I love. It didn’t have the sponge cake on the bottom. This looks wonderful and I now know how to try and make it. Thank you.
Such a brilliant idea in this recipes because the caramel sauce usually get thrown away. That sponge will absorb it and becomes another delicious dessert. 2 in 1 and nothing goes to waste. Love vietnamese recipes.

Hi Marion, Flan is one of my favorite desserts. Your flan looks so delicious! It makes me want to eat flan right now. Vietnamese people often eat Flan cake with a little coffee poured on top of the cake! 😄😊❤❤❤ Forgive me because I'm not very good at English. Hope you always make more delicious dishes!
It wouldn't be a Marion video without her saying "All the things!" at least once, amirite? This looks delicious, Marion, and despite several of the elements being quite technical you make it seem so achievable. Would it be sacrilege to spin this recipe by flavouring either the custard or the cake? Chocolate and some kind of lemon/lime situation are my first thoughts. Perhaps even lemon, lime and bitters, using some of the bitters leftover from your chicken recipe the other day.

If you use an electric mixer there won’t be unblended bits of yolk.
