How to Make the BEST Flan | Easy Mexican Flan Recipe

Caramel
½ Cup Granulated Sugar
2 Tablespoons of water
Cook in small pan until shiny gold color, do not overcook as it can get burnt pretty easy. Pour over greased flan mold we use a 6” round because we like our flan taller, but you can use a 8” round or a square mold. Set aside. Be carful as pan may get hot with the caramel.
Flan
4 Large eggs (room temperature)
1 can Condensed Milk
1 can Evaporated Milk
115 grams or 4 oz Cream Cheese (room temperature)
1 Tablespoon of Mexican Vanilla Bean paste (Vanilla extract is fine)
1 Pinch of Salt
Pour all ingredients in mixer and blend until smooth and light. Pour over your caramel pre prepared mold. Bake at 325 F on Bain Marie (water bath) for 1 hour or until golden brown on top. Make sure water covers at least ¼ of your flan pan. Let it cool completely and refrigerate in pan at least 2 hours. Unmold by turning over a round semi deep plate. Try it and let’s enjoy it together Around the Table. Buen provecho!

Why didn't I think of that? The little trick of using a spatula to cascade the custard mixture onto the caramel is brilliant.

I’ve never made a Flan with cream cheese before I’m gonna try that, but I cook mine in an Insta pot, and it turns out beautifully! Saves a lot of electricity plus it doesn’t heat my whole house up! This is how I use the insta pot: 1.75 qt Pyrex glass bowl, pour the sugar glaze into the bowl and set it to cool, then pour your flan mixture up to 1 inch before the top. Put that on a trivet put one cup of water in your Insta pot and then cook it on regular pressure for exactly 30 minutes and let it cool down naturally after I take it out of the pot I let it cool completely on the counter before I put it in the refrigerator overnight, try it you’ll never go back to an oven again!

Thank you for sharing the secrets from your mother-in-law, you must be a favorite person in her life. Your flan looks so delicious, after working in the garden on a beautiful warming day, I decide to take a nap but after I see your video, I run right back in the kitchen and figure it out we don't have the evaporated milk, so my husband volunteers running to the grocery store to get it and I start with the rest. Oooohhh & the Flan this lovely fella made is beautiful, it's the best I've seen, by far. And for that lovely fella hosting the video..... 👏👏👏 Excellent!! My very first flan is in the oven right now! I swirled the caramel way up the sides to hopefully help it is to unmold easily. I forgot the pinch of salt, too. But I won’t sweat that.

They are regular oven gloves, just need to find the ones that have the plastic at the end. Try Sur La Table

Thank you! Make sure to avoid any dripping disaster, use soft soapy sponge while the oven still warm. If already has build up try a spray de-greaser (do it while warm). Hope it helps.

I've made flan many times but never with cream cheese. How does it affect the flavor? Can you really taste the cream cheese?

I was going to say the comment the same, though it does look really good, I use 6 eggs instead of 4 and get pretty much the same looking texture wise, not sure I want "tang" in my custard flan but of course there are thousands of ways to make flan.
What are measurements, size of flan pan, I need to buy one via Amazon. Please I want to make this . Carol

Hi, Carol I used a 6" round cake pan that needs to be at least 4" in height, you can use a regular 8" round cake pan but consider that the flan would be not very tall. Let us know how it goes. Happy baking

Did i miss it? How much cream cheese?
Was the water for Bain Marie supposed to be boiling? At one hour the flan is not jiggly its liquid 4/5 of the pan, only edges look somewhat firm. 😡Not sure how you did it but once pan is greased it wont allow me to cover the sides with the hot caramel. All caramel just falls back to the bottom.
Hola! After taking it out of the fridge, do I need warm water or anything to soften the caramel so that it comes out better? Or do you flip it out right from the fridge? In my head the caramel would be too hard out of the fridge, but I’ve never tried making it so that’s just a theory 😂. Muchos gracias! 🙏🏽

You don't need to heat it up. Just take out of the fridge a loosen the sides like he did and flip.

There is also a Filipino leche plan version. Ingredients are almost the same except the process of doing it. 🍮

almost perfect, but not covering the top while baking I saw at the end created a crusty bottom... not sure if that would add for better experience for some. Anyone prefer to cover it or not cover it? If not covered, why?

It is optional, as you flip it over to serve so it does not make much difference, I like the little crusty bottom as mimic the caramel crust. Happy bakings

Jeeze KZread really wants me to learn how to make flan. I love flan, but I keep getting different suggestions for making it.
Says not to mix the sugar but ends up mixing this shit, I’m gonna be honest with you guys. You literally can just leave it there only keep it from being on the edges of the pan because it will just burn that’s it you can toss it on the sides literally maybe three times the rest leave it on medium low heat, when it’s real golden, then you can give it a couple stirs that’s it but yes, he is right adding just a little bit of water gives you more leniency and more control over the sugar not the sugar itself but how fast it cooks.
