TIP- Look for the stiff giggle!
Ingredients
3/4-1 Cup Sugar
1 Can Condensed Milk (Lechera) 14 oz can
1 Can Evaporated Milk (Carnation) 12 Oz can
2 Cups Heavy Whipping Cream
2 Tbs Vanilla (Mexican Vanilla Blend Extract)
5 Eggs
All Ingredients used are room temperature
It’s important to use Heavy Whipping Cream for that amazing creamy Texture
Bake at 350 Degrees for 50-60 Minutes
I used a 9-inch nonstick pan
* TIP! When your flan is ready you will see a stiff giggle
* Depending on dish used you might need to cook it 1 hour 10 minutes to achieve the stiff giggle
* Remember the flan will firm up in the refrigerator
* Water Bath, Use 1 1/2 to 2 inches of water (Max Mid-level of your baking dish). Do not overfill water. You don’t want it to get into your Flan
* When you get to the 50 Minute mark do the little shake I mentioned in the video. If your blend is still runny. Keep another 10 Minutes in the oven. Keep in the oven until you achieve a stiff giggle : )
* When your flan is done. Let cool 30-45 minutes on the counter or your location of choice. Place in the refrigerator overnight (12-14 Hrs) Until your Flan Sets to a firm consistency. I know it’s hard to resist. Love takes time and so does a delicious flan.
* When you are ready to separate your flan from pan. Use a sharp-pointed knife or a butter knife. As it separates you’ll notice liquid. Don’t get scared. That liquid is the sugar that turned to a delicious syrup
*DO NOT over layer your water bath. If you do you will be baking this for a long long long time LOL Don't do it, friends,

    I never comment on anything. But I have to for this video. I’ve seen so many videos on how people caramelize their sugar- which is stirring the whole time. That clumps up the sugar horribly and then it takes forever for those clumps to melt. I finally tried your method (third time is the charm)... and oh my goodness. My heart cried of happiness. This is THE way to caramelize sugar. I don’t understand why people would do it otherwise. Thank you for this video and all your tips! I’m a fan!

    Learned a tip to take the flan out of frig and place in pan adding hot water to do a minute of baño de Maria to heat up just enough so when you flip it, it loosens smoothly without cracking.

    @@kricketkitty The Flan has been refrigerated overnight, so it's cold. You're pouring hot water, the same amount again as when you baked it, for a water bath. Setting your dish of the Flan down into the hot water will cause a change in the temperature of the dish and the Flan. This does the job of helping to make a nice release. DO CHECK and see if you still need to run a knife around the edge. I would. It will help with a crack-free top.

    I made your flan last night and it was DELICIOUS! I saw another video where someone melted the sugar using 2 or 3 tbsp of water and no utensils. Placed a lid on the pan and the water from the lid kept the sugar from crystallizing. When it started turning color, he just swirled it around until the melted sugar was the color of maple syrup then he immediately poured it into the pan. Worked really well. Anyway, thanks so much for sharing your recipe. It’s staying in my recipe file. Loved it.

    A tip for those who live in a colder climate: heat up the pan in the oven first so the caramel can spread smoothly and evenly without cooling down too fast! I was struggling with this when I first made it, but I was able to work it out 😂

    I made this once years ago from a recipe in a book. It turned out awesome, but when I was putting the caramel in the dish, a drop of it landed on the back of my hand. And as you know YOU CAN’T just stop pouring the caramel, it will all be ruined. So I got it in there and spread out, and the I looked at my hand and the drop had solidified. I peeled it off and the skin underneath (about 4mm diameter) was GRAY. Just absolutely killed. I was kinda proud of it, because that flan was STUNNING, beginner’s luck I guess. 20 years later I still have a little white scar.

    Fun fact in Cuban flan we put it in an inclosed container and we use the pressure cooker/instant pot with a cup of water on the bottom. And cook for 30 minutes! Comes out perfect every time!

    I did this you’re right, it works perfectly! 30 minutes on regular pressure with a natural cool down then afterwards, let it cool to room temperature on a rack before putting in the refrigerator overnight .

    I impressed all my friends with this recipe - soooo good! So, since my daughter didn't get any, I told her I'd make it again, but realized I was out of condensed milk, so I made the Martha Stewart flan that doesn't use condensed milk. Girl, please. I took one bite, threw it out and came straight back here! Yours is the BEST recipe - better than any I've ever had! Thank you 💜

    I made this as a project with my adult son whom I haven't seen much in the last few years due to deployments. We're both pretty good cooks though he hasn't made many desserts. We actually made 2 of them. He wanted to take one to work to share with the crew. We baked one in the oven and he baked one in his new smoker with applewood chips. Neither of us had ever made flan so we watched the video a couple of times together. That helped LOTS. I love that the video is casual and fun. We needed all the encouragement we could get. Both batches came out great. The plate that went to work came home empty. It didn't take the family (6 of us) long to eat the other one either. We gave our sugar a slight burnt flavor - my favorite. I'll make this again for sure.

    Thank you for your recipe. I made it last night. It was a little bit too sweet for me so I will cut the sugar down at least in half next time but I wanted to let you know that I cooked it in the Insta pot and it worked out really good. This is what I did: I used a glass 1.75 quart Pyrex bowl and I put my sugar glaze on the bottom and filled the bowl to 1 inch from the top and I put one cup of water in the Insta pot and put my flan on a trivet and cooked it at normal pressure for exactly 30 minutes without putting a lid or cover on the bowl. You will have to dab a little bit of water off the top when you take it out . Then I did a natural cool down until all of the pressure was released then I let it cool at room temperature .after reaching room temperature I put it in the refrigerator overnight. The consistency was absolutely beautiful. I hope that helps those who are using an Insta pot to save money on electricity to cook with, thanks again for your lovely recipes one other thing I’d like to say is if you add a teaspoon to a teaspoon and a half of lemon zest to that recipe it really makes a lovely flan. I have done that for over 40 years.

    So I've made this 3 times since you posted this. July is a big month for my crew. The first time, I followed your recipe exactly. It was perfect, creamy, delicious, just to die for you know. The second time, I was in a rush, didn't babysit the sugar like I should have, and didn't use the cheese cloth but did use a regular strainer. It was still delicious, but the texture was wrong, had a weird foamy almost tofu texture at the top. The 3rd time I followed everything except I mixed with a whisk instead of a blender. It was just as perfect as the first time. So I may skip the blender in the future so I can make this when my babies are sleeping. Anyway, thank you for being so clear with your directions. This is truly the perfect recipe as is. My suegra even asked for the recipe and is now in love with your channel too💕

    I have made this several times and get the most consistent results. The comments I get are mostly "best I have ever had". I met you one time when you lived in LV and have been following you for year. Thank you for all you do and the way you explain things with vairations. I am 73 and have been cooking since about age 5.     I just made this recipe and it came out delicious. It even got my mother’s stamp of approval 😂 Refrigerating definitely helps cut some of the sweetness. I at it after 6 hours of refrigeration, and it was a bit too sweet. But when I had it the next day it was perfect.

    Yes, always better with overnight refrigeration- a change occurs. I find that even cakes are better the next day.

    i make this recipe all the freak'n time and it turns to amazing each and every single time....it makes me feel like the flan queen every time i make it lolol...i added a lil something to my flan and called it my Vietnamese coffee flan...love your recipe so so easy to make and so delicious

    @@AbottNCostello hey it’s listed in the beginning of the comments…but here it is…1 can of condensed milk 1 can of evaporate milk 2 cups of heavy whipping cream 5 eggs Vanilla 3/4 sugar (for the caramel part) hope this helps you its super easy

    When I make flan, I run a knife immediately after I have taken it out of the oven, that way it won't break. Also, after 50 minutes, I pick the flan in the middle with a long toothpick. If it is dry, the flan is done, but if it still a little wet, I turn off the oven with the door open a little and leave the flan inside another 10 minutes. 🍮

    I have made this about 3 times now and am making it again tonight. I’m Cuban and grew up on flan but never like this one. The texture is so creamy!! My mom absolutely loves it and keeps requesting me to keep making it!

    I add a tablespoon of coffee to my custard blend and my flan comes out so good. The coffee taste gives it a whole different flavor.

    A few years ago a friend of mine brought flan to work for us to try. She's from Brazil. Oh my goodness best stuff. I told her I wish my dad was alive because he loves custard and he would love flan. It was the first time I had ever heard of or tasted it and I was in my late 50's. So I went home and looked up a recipe. You know what it is exactly how you make yours. So I'm glad I accidently found your post on KZread because I can make sure to do the ingredients correctly when I make it in the future. I always let it cool down before I put in the fridge and I usually let it cool in fridge overnight. I swear Flan is the best dessert on planet earth. Thanks Pumpkin pie was my fav but it has to take 2nd place to flan. Oh when I made flan myself before I found your recipe I took it to work and they loved it and liked it even more than my friends. So Mexican Flan must trump Brazil Flan. Both were delicious.

    My son saw the picture of the fan on the sweetened condensed milk can and asked me to make it. I have never made it before. I was searching for a recipe when I remember Views on the road.     Yes!!! Remember you're looking for a stiff giggle to let you know the flan is done. Setting in the fridge overnight is best, but difficult if you're craving flan hehehe🤗❤️

    I just made flan today and the recipe I have called for a third cup of water to dissolve sugar and then cook till amber. It made it pour very easily It called for 3 whole eggs plus 2 egg yolks poured into whipping cream and whole milk slowly to not create foam, then strain. It comes out sooo creamy. I enjoy your channel.❤

    I just came here to say that this is the BEST dessert ever 😍. I made this recipe last night and served it today and oh my goodness!!! I was worried because it took about one hour in 40 for it to cook and the suggested time was one hour. I am not a sweets fan but this is TOO GOOD

    I recently had a flan at a Mexican restaurant. It came out like yours. It was creamy but still firm. To boot it was also made with a little bit of coffee liquor and let me tell you, it was AMAZING!!! I’m Hispanic, so I thought I had tasted the best and worse of flans in my life. Now I know why it was so delish. It’s the heavy cream! Thanks for sharing your recipe. ❤
