This week, renowned pastry chef and Cronut®-inventor Dominique Ansel joins me in the kitchen to show me how to make a custardy classic: crème caramel, also known as flan. I've always been intimidated by the dish, so being taught by one of the greatest bakers in the world should help me make something edible!

Because he recognizes - and respects - talent in those he meets. He learns from watching people like this, and to have them there in person .... But yeah, the humility just makes you love him all the more because he's not trying to show off, he's just being his own self and you can tell the professionals generally enjoy themselves as well in an atmosphere like that!

I just made this recipe, and...I have questions. So, the amounts in the recipe make a LOT of custard. Significantly more than 4 ramekins worth, and my ramekins are a bit bigger than the ones they used. Also, the recipe is for four ramekins, but when they actually put it in the bain marie it's only 3? Are we supposed to just bake the 4th one separately? I jammed all 4 ramekins into the pan and it worked ok, but I don't necessarily recommend that. I had to lengthen the cooking time, and because they were so close, the water bath couldn't do its thing in the same way. I'd recommend making this recipe for 6 instead of 4: you can make the same amount of custard, 1.5x the caramel, and then you can bake it in two batches of 3.
