100% True. I think this applies to any ingredient, not just spice. Take a simple soup that asks for onions. Raw vs Caramelized, different types of onions, can change the flavor of the soup.

Does anyone know what spices were actually used in the mahkani in the video? From what I saw in the video (and from listening to the audio) it's tomatoes, ginger, garlic, turmeric, black peppercorn, cumin, chili powder, salt, then butter and cream. That's about 6-10 spices less than what a typical mahkani has. I'm really curious if anyone has tried this because if it works, the abbreviated ingredients list and steps would make this a weeknight-possible dish.

Well it's amazing Japan had taken notes from India with that quote Not too much spices for them even tho they add jam which what makes Japanese curry unique, but still come out satisfying to eat with white rice (I eat Indian Currys with naan or other flatbreads, I eat Japanese curry with rice, it's how It is for me)

I've always seen it more as a process or blend of spices. Usually implemented in a stew - like dish, but I'm not sure it's genetic enough to be like soup or cake or sandwich.

Yep. Before british colonization, dishes were just callled by their names. The brits, not really caring enough to learn each name, just called everything curry.

In Thailand, curry’s direct translation is แกง (gang), which means the type of food that is a cross of the soup or the stew, where the fluid is thick from the spice paste. If the soup is thin or clear, it’s called ต้ม (tom = boiled) instead. And consider that Thai food shared a lot of characteristics with Indian food, I would say the meaning is probably similar.

Man, what a privilege. This was informative and incredibly gratifying. I've always been intimidated by Indian cuisine but he makes it feel accessible without neutering the complexity and depth of the dishes. His family is very gracious for sharing this piece of him with us.

Chef Cardoz seems from this video to be such a softly and elegantly spoken chef. Sadly, I don't know much of his other works, but im currently making a curry from this video in his honor. Rest in power, my friend.

As an Indian, you have no idea how much I appreciated this episode. Chef Cardoz was a legend.

@@rexiioper6920 The cuisine itself was not "changed" by Cordoz, but his efforts to bring Indian Cuisine to the world and break it's stereotyping into "orang gravy with spice an heat" did change how a lot of Americans (consumers and chefs alike) look at Indian food.

Really happy to see that Babish made the 100th episode of basics with Babish in the name of Floyd Cardoz. Really liked him. Sad that he passed away. Covid really took a lot of things with it. Really liked him in the Indian bread video

If you have a way of seeing it, it was on Top Chef Masters awhile back. Very nice dude and a monster chef.

Chef Floyd was a great man. I was an international culinary student intern in the bombay bread bar. He has taught me a lot of things about indian cuisine and how a real kitchen works.

This pandemic took away so many great people from us...

As an Indian, my heart is shattered I saw him last time on the Indian breads episode and fell in love with his calmness and personality we have lost a gem

They say someone doesn't really die until we stop talking about them. Hopefully this also extends to a spice line created by them. RIP.

I’m not sure why I burst into tears every time I see the man; I’d never met him, and had only eaten his food a handful of times. However, somehow his death has encapsulated the tragedy of this past year for me. In an effort to lighten the mood (mine at least), here’s a snarky faux question: If I’m out of delicious backstory, can I just stick with the fennel and ginger?

Dude had the MOST relaxing voice. Could have done a legit ASMR cooking channel

I learned of Cardoz from his appearance and winning a season of Top Chef Masters. I've worked under an overbearing chef and Cardoz was the opposite in the kitchen. Learning that he lived his life the same, makes me respect him even more.

Andrew is one of the most wholesome, lovely, and humble people on the internet.

I loved when Floyd was talking the regional differences of curry for me it brings to mind the regional differences of pasta for Italian Cuisine and BBQ for American Cuisine, just to name a few examples. Cookery has a strange effect of bringing us all together as humans but allowing us to express uniqueness. While we enjoy different foods because of what is local and what we can shipped, ultimately we all enjoy food and we all want to change and adapt things to meet our wants/needs.

Sorry to hear of his passing, I don't think I've known of him before, but he genuinely seemed like a great guy. Sending my Condolences to his family.

Floyd started this restaurant in Bombay called Bombay Canteen and it's honestly the loveliest expression of what indian food is, what indian food can be. His death hit so many of us so hard and to see him here just reiterated how important he was, he is, to the cusine.

It's so beautiful when Floyd talks about the variety in curry.

As a person from a country where the majority of my ethnic Indian brethren are descendants of Tamilians, curry is one of the more flavourful dishes. RIP Floyd

I live close to a restaurant Floyd was involved in, O’Pedro, where I’ve always enjoyed going. The news of his passing had an unexpected affect on me despite having never met the man. I continue to order from his restaurants, helped make me and my mom’s time in the pandemic a little less depressing. I wish his family the best and suggest people to check out his work and order from his restaurants. RIP Floyd.

I didn't know he'd passed away and I'm really really saddened by this. Thank you for the small acknowledgement at the beginning, and I love just overall how this episode shows Flloyd's dedication to his work, his love for Indian cuisine, and just the sheer respect he commanded. I had the privilege of meeting Floyd and eating some of the food he made and this episode truly hit me in the feelings. Truly a culinary giant and his personality was incredible. He is sorely missed.

Never could get enough of Floyd teaching Indian food. He has such a peaceful and measured way of delivering the information. You can tell what it means to him and it makes you want to learn how to do these things the right way. He is missed not just in the food community, but as just an all-around decent human. RIP.

what a fantastic tribute and a wonderful honor to his memory and his family. I didn't expect to be moved by recipes tonight but here we are and I love this.

Curry really is more of a category of food rather than any singular dish. That is one thing I adore about Indian cuisine- there is SO MUCH variety! Every region has its take on curry, on biryani, etc. and every family has its variation on that version, and it's all so delicious! You seriously couldn't try it all in one lifetime... From Butter Chicken and Tikka Masala, to Rogan Josh, to Laal Maas, Vindaloo, and so on. The variety is dizzying and it's all fantastic and worth a try.

I hope his family feels comfort and peace right now. He seems like he was a lovely and gentle person.

Floyd has such a gentle calm demeanour.

This kinda makes me sad. How many jewels have we lost to this pandemic. It is immeasurable

Floyd was one of the first major Indian chefs I saw on TV from a young age, and his presence influenced me to learn more about my culture's foods. I'm very grateful for him and his work in an underrepresented space.

he had such a calming presence. was probably delightful to have him around

I just finished a hectic work week and hearing Floyd speak was incredibly calming, to the point that I physically felt more relaxed afterward. What a tragic loss. My thanks to his family for giving us a chance to see this.

R.I.P. Chef Floyd Cardoz, may your recipes, and memories live on in others.

I've now watched two episodes with Floyd Cardoz and they were absolutely wonderful, but I had to pause watching this one because I was not prepared to learn that he had passed away last year. Thank you so much for introducing me to Floyd, and all that he had to share. Condolences to his family.

I love how reverent Babish was with this guy before the sad loss. What a stand up guy!
