The Real Reasons We Don't Cook With Lard
If you're choosing an oil to cook with, there are too many options to count, each saying that they are the healthiest, the lowest in fat, the least cholesterol, and so on. But lard, the oil we used for most of history is rarely found in the modern kitchen. Is it really that bad for you?
The rise of vegetable oil can be traced back in large part to Proctor and Gamble and the invention of Crisco, a vegetable based shortening that was supposed to be better for you than lard. Crisco, however, turned out to be 50% trans fat, the worst type of fat.
This video looks at the history of vegetable oils and why we have largely eliminated lard from our diet, and whether or not that is the right choice.

these are some factors. Ansel Keys also played a significant part, as did the american government and so many others.
I have not consumed seed oils in many years. I mostly use tallow and find that preferable to lard.

For salad -- yes. For cooking -- no, due too low smoke point.
